Zucchini Chips in the Air Fryer

Some people are sweet snackers, others savoury, just like me! These are spot on! Zucchini tastes mild; however, when combined with the right ingredients, they pop! You can add a touch of this Tajin spice mix, which is magical with it. You can bring them for a picnic, lunchbox, potluck or as a snack. They are quickly done and suit everyone. Their texture aren’t as crisp as potato chips, they are mostly made of water after all, but crips enough to dig into a lovely whipped ricotta and sun-dried tomato dip, for example.

Air Fryer Tips

You’ll need to make many batches of the Zucchini Chips in the Air Fryer recipe, so do not overfill the basket. I made mine overlap a tiny bit, but halfway through cooking, open the basket up and ensure they are not all stuck together. This way, you’ll cook them more evenly!

Air Fried Zucchini Chips Dip

If your kids are like mine and sensible about spicy things, you can always make a batch without for them and one with for the grown-ups. These chips are a great way to fill them up on vitamins, especially if they come with a dip. It could be a simple sour cream and chives dip, a classical pink mayonnaise dip, ranch or my whipped ricotta and dried tomato dip.

Ingredient Breakdown

You’ll only need a few ingredients for this, and I’ll provide substitutes if you don’t have everything in the pantry.

  • Zucchini: The main star of the dish! Try to aim at a medium to small-size zucchini (courgette) to keep the shape intact once cooked; the larger ones would get saggy and deformed.
  • Nutritional Yeast: A lovely vegan replacement of Parmesan cheese, it brings in this umami flavour without the fat and lactose. Help to crisp up the chips, too. Real grated parmesan could replace it.
  • Olive Oil: Any chips need a little oil; the amount is minuscule compared to a deep-frying method. Some fat helps to give the chips taste and colour.
  • Rice Starch: Rice starch is gluten-free and helps to make anything crispier! It is not exceptionally nutritious but is essential to a crisp texture. You could also use tapioca or cornstarch.
  • Garlic powder: Dehydrated garlic turned into powder is a great way to give the chips this Mediterranean flair. You could substitute it for the real deal, but the taste will be less uniform and more robust.
  • Tajin Spice Mix: This is my favourite spice mix for a light touch of chilli heat. It’s a Mexican condiment, and they offer many levels of heat, although the regular one is mild and contains a touch of lime zest and salt, which makes it irresistible! It’s a great way to introduce the kids to spicy food. Depending on your preferences, it could be omitted or replaced by Espelette pepper, paprika or cayenne.

Leftovers Ideas

If you have leftovers, keep them in an airtight container in the fridge. The next day, you can add them to a lovely tomato pasta sauce, into quiches or omelettes, or a lovely big quinoa bowl or salad. They’re super easy to incorporate into many dishes!

Variations

You could customize these to your liking, for example, by adding real parmesan, thyme, marjoram, garlic, paprika, etc.

Can I bake them in the oven instead?

Yes, you could, although it will need a time adjustment and will be cooked less evenly.

Can I substitute the nutritional yeast for parmesan?

Yes, you can! It will be as delicious!

Can I substitute the garlic powder for garlic salt?

Garlic salt contains three parts salt and one part garlic powder, which makes it super salty if you use this cut on the normal salt.

Air-Fried Zucchini Chips: A Crunchy, Cheesy-Style Delight with a Hint of Spice, Served with a Luscious Whipped Ricotta and Sun-Dried Tomato Dip.

Equipment

  • mandoline slicer

Ingredients
 
 

  • 2 zucchini
  • 2 tbsp olive oil
  • 2 tbsp nutrional yeast or parmesan
  • 2 tbsp rice starch or corn starch
  • ½ tsp garlic powder or mashed garlic clove
  • ½ tsp Tajin or spicy paprika *optional
  • salt and pepper

Instructions
 

  • Cut the zucchini into thin 2mm slices with the help of a mandoline.
  • Add to a big bowl with all the other ingredients and mix.
  • Add half the zucchini to the Air fryer and cook at 200°C (400F) for 10 minutes, check mid-way to make sure they don't stick together.
  • Do other batches making sure not to overfill the Air Fryer, serve with the whipped ricotta and sun-dried tomato dip.

Notes

The mandoline slicer is recommended for making your zucchini ultra-thin and even; this way, it’s easier to cook evenly, too.
Don’t overcrowd your Air Fryer basket; a slight overlap is ok.
Serve with a whipped ricotta and sun-dried tomato, ranch or romesco dip.
