Simple Whipped Mascarpone Stuffed Strawberries

We all remember the classic combo of whipped cream and strawberries from childhood, but have you ever taken it up a notch? Swap the cream for luscious mascarpone cheese, adding a rich, tangy twist to those ruby-red berries! Whether you stuff them with whipped mascarpone or layer them into a parfait with crunchy pistachios, this treat is irresistible and easy to make. Mascarpone Cheese

Mascarpone is the cream cheese of Italians. It’s easy to make at home with simple cream and lemon juice. If you’re interested in creating your own, check out this recipe. Mascarpone is not as tangy as cream cheese; it’s higher in fat content, about 60-75%, making it buttery and milder, almost sweet. It goes perfectly with acidic fruits like strawberries.

The Whipping Technique

To make the whipped mascarpone airy and fluffy, I’ve added cream and a light amount of sugar to keep the cream taste not overly sweet. Here are a few tricks to make it the perfect texture!

  • Make sure the mascarpone is not too cold. Before using it, leave it on the counter for 20 minutes to soften.
  • Whip the heavy cream to a soft peak, ensuring the cream and bowl are cold. Then, incorporate the mascarpone cheese.
  • You can make the mascarpone stuffing ahead of time and store it in the fridge until ready to use. However, you should give it a slight mix before using it in case it separates.

I stuffed the biggest strawberries by cutting the tail off and making a cross incision on top of each fruit. This makes sticking the pouch and stuffing them easy, and they hold perfectly. But we could also cut the strawberries in half lengthwise or make small parfait cups, making a lovely dessert. The ingredients are essential here, not the format.

Variations

Although mascarpone and cream cheese could be substituted in many recipes, you should stick to Italian cheese for this one. It’s milder and softer, and the tang of cream cheese would require more sugar.

For the pistachio crunch on top, you can use your favourite nuts, such as almonds, walnuts, or even maple crystals.

Storage

You can prepare the strawberries ahead of time, stuff them, and refrigerate them. However, keep the pistachios for the last-minute touch to maintain their crunch. The parfait format can also be prepared ahead of time and left in the fridge for a day or two without a problem.

Whipped Mascarpone Stuffed Strawberries are filled with whipped mascarpone and pistachios. This elegant yet easy dessert is ready in minutes—perfect for parties, brunch, or a fun kid snack!

Ingredients
  

  • 40 strawberries
  • 250 g Mascarpone cheese Soften for 20 minutes on the counter.
  • 150 g heavy cream
  • 2 tbsp confectionner's sugar
  • ½ tsp vanilla extract
  • 1 handful pistachios crumbled (could be salted or not)

Instructions
 

  • Whisk the heavy cream with the confectioner sugar and vanilla extract in a preferably big cold bowl until a soft peak.
  • Add the mascarpone cheese, soften slightly, and whisk into the whipped cream until smooth.
  • Cut the strawberries tails off and the top into a cross that goes through 3/4 of the fruit length.
  • Crush the pistachios with a mortar or bottom of a glass.
  • Fill a pastry or plastic bag, which you cut the corner off, with the whipped mascarpone and fill each strawberry, finishing with a topping of crushed pistachios.

Notes

You can make different formats: into little parfaits or as a dip for strawberries.
It can be made ahead of time and left in the refrigerator; however, add the pistachios just before serving for a better crunch.
