Ultra Moist Carrot Muffins with Walnuts
Ingredients
- 200 g all purpose flour
- 200 g grated carrots equiv. 3 medium-sized carrots
- 200 ml milk
- 150 g brown sugar preferable the dark type
- 75 g walnuts crushed
- 70 g butter room temperature, cut into cubes
- 50 g oats rolled or quick type
- 1 egg
- 1 tsp baking powder
- 1 tsp cinnamon powder
- ⅓ tsp nutmeg *optional
- 1 pinch salt
Instructions
- Preheat the oven to 200°C (400F°).
- In a big bowl, mix all the dry ingredients and mix them.
- Add the egg, butter and mix until the butter is well incorporated, it will be dry, then add little by little the milk until a nice smooth consistency.
- Add the mixture to a muffin tin and bake in the oven for about 25 minutes, inserting a toothpick to verify its doneness.
