Who knew that cold artichoke dip could be such a hit? Even kids love it—mine sure do! This easy recipe blends tender canned artichoke hearts, creamy cheese, and fresh chives for a delicious Mediterranean-inspired flavour. Serve it with veggies or crackers for a simple, crowd-pleasing snack!

Easy Breezy Dip

It’s a dip with cream cheese, so be careful with the salt you add; make sure you try it before. The artichokes are blended first with the lime juice to smooth them before adding the cream cheese. We want to get the taste of the artichoke, but note the harsh texture.

Artichokes are nutrient-packed vegetables, often used in extract form to support digestion. While they’re a fantastic ingredient, canned artichokes come in a salty brine, so be mindful when adding extra salt to your dip!

It’s such a polyvalent dip; it goes with so many dishes. Here are a few:

  • Crunchy veggies like carrots, cucumber sticks, celery or bell pepper.
  • Crackers, tortilla chips or salted biscuits.
  • An actual steamed or roasted artichoke.
  • Fresh or rye bread with a lovely smoked or marinated salmon on top.
  • French fries or roasted potatoes.

Variations

I saw this dip eaten warm or cold, some with spinach. You can add some if you desire, but I’ve added fresh parsley and chives, which bring a fresh touch.

Storage

This dip can easily be stored in the refrigerator for 4-5 days in an airtight container or covered with plastic wrap. For more extended storage, you can also freeze it!

Cold Artichoke Dip is a simple yet delicious dip made of cream cheese, parmesan, chives, garlic and many artichoke hearts served with crunchy veggies or crackers. A guaranteed crowd-pleaser!

Ingredients
 
 

  • 400 g artichokes hearts (1 can)
  • 200 g cream cheese
  • 30 g parmesan
  • 3 tbsp creme fraiche or sour cream
  • 2 tbsp flat leave parsley finely chopped
  • 2 tbsp chives finely chopped
  • ½ garlic clove minced
  • 1 tbsp lime juice eq. to 1/2 a lime
  • salt and pepper

Instructions
 

  • Blend the artichoke hearts with the parsley, garlic and lime juice until smooth in a food processor.
  • Add the rest of the ingredients and mix until homogenous.

Notes

Serve with crackers, veggies or breadsticks!

    1. The juice of half a lime is about 1 tbsp. I’ve changed it in the recipe card to make it clearer. Enjoy!
