Tropical Fruit Salad with Coconut Milk

This vibrant Tropical Fruit Salad features a medley of papaya, mango, strawberries, kiwis, and blueberries, all macerated in a luscious blend of coconut milk and pineapple juice with a unique lime twist. This refreshing summer dessert or snack is perfect for any occasion—a kid’s birthday party, potluck or picnic. Prepare it beforehand to allow the flavours to merge into a harmonious tropical delight.

Coconut Milk

I recommend milk instead of coconut cream because it’s unsweetened, and the fruits contain plenty of natural sugars. Plus, coconut milk will smooth out the acidity of the fruits, making the perfect balance for this dish! Coconut milk isn’t like cow milk; it doesn’t curdle when in contact with acidic elements, making it ideal for this fruit salad!

Kaffir Lime

The unique but optional citrus touch of this tropical fruit salad, kaffir lime or Makrut leaves is fantastic. The leaf worked like a bay leaf; add one, and you’ll enjoy this lime flavour in your dish without squeezing anything. It’s often used in coconut curries; you’ll find them in the frozen department in Asian Markets. I recommend it, but it is optional; you can squeeze a lime or lemon!

The Outsiders

While strawberries and blueberries aren’t traditionally tropical fruits, their vibrant colours and delightful flavours complement the coconut milk base beautifully, enhancing the salad’s appeal. I chose to exclude bananas, which tend to brown and become mushy.

Variations

The main idea here is the pina colada-style marinade the fruits swim in, so you can choose the fruits you prefer. I like these for the rainbow effect, which is always a must for the kids.

Adding a topping of coconut flakes or shreds gives it extra texture.

Also, as previously mentioned, the Kaffir lime isn’t mandatory; you could replace it with a simple squeeze of lime or lemon.

Storage

Fruit Salad generally lasts 4-5 days maximum in the fridge if the fruits are correctly cleaned, manipulated, and in an airtight container. However, the prime time for this salad would be 12 to 24 hours of maceration. You need a bit of time to let the kaffir lime and all the fruits give their best.

This vibrant tropical fruit salad combines fresh pineapple, mango, kiwi, and more, tossed in a light citrus dressing. It's a quick, healthy, and refreshing dish—perfect for summer days, picnics, or a kid-friendly snack.

Ingredients
 
 

  • 200 ml coconut milk
  • 250 ml pineapple juice
  • 150 g blueberries
  • 1 mango
  • 1 small papaya
  • 3 kiwis
  • 10 strawberries
  • 1 kaffir lime leaf or the squeeze of a full lime
  • 1 pinch salt

Instructions
 

  • Cut all the fruits into small cubes and add them to a big bowl.
  • Add the coconut milk, pineapple juice, kaffir lime or lime and mix.
  • Add a pinch of salt, cover, and let macerate in the fridge for a few hours before serving.
