Kid-Friendly Version

These Avocado and Mango Paper Rice Rolls are visually appealing and a fantastic way to introduce your little ones to the goodness of fruits and vegetables. They make a refreshing snack or even a light lunch option. The Sriracha Mayo is mild enough, but if your kid is sensitive to spicy sauce, change it for a standard mayo. Also, better keep the fresh cilantro out of the rolls and voila! You’ve got a kid-friendly version they can enjoy and roll themselves!
The Rolling Technique
For those unfamiliar with rolling spring rolls, here is the technique in pictures to help out!

- Soak or rinse the rice paper in water for two seconds and let it down on a wooden surface.
- Lay down the wet rice paper and fill the center of the sheet with all the ingredients you want (do not overfill).
- Fold both sides over the ingredients.
- With the bottom side, cover the ingredients and tighten them lightly to squeeze them together. Then, start rolling upward tightly but gently.

Are you unsure which of your guests is vegetarian or who hates cilantro? Let your guests make their own rolls! You can set up a table with various veggies and let people choose their own mix. They even sell water recipients online to dip the rice paper directly at the table (Check this out). It could be a fun way to start dinner, for sure!

Is Rice Paper Gluten-Free?
Yes, they are usually made of tapioca and rice flour. However, if you are Celiac, always watch for the certified gluten-free symbol because some of them could be cross-contaminated. A great way to enjoy low-carb, gluten-free and vegetarian this wrap!
Can I make them ahead of time?
Yes, but no more than one or two hours ahead of time. The rolls contain avocados, which will darken, usually after three hours. Also, keep them in the fridge, even for an hour, and put a damp cloth on them to prevent them from drying out.

- 12 spring rolls papers Approx. one pack
- 2 avocado finely sliced
- 1 mango cut into thin sticks
- 1 carrot cut into thin sticks
- 1 cucumber cut into thin sticks
- lettuce any crunchy type
- fresh cilantro to taste
- Sriracha Mayo to taste
Instructions
- Start by cutting all the veggies.
- Rinse the rice paper under water (or soak it entirely in a bowl).
- Add, cilantro leaves first, then filled the rice paper with all the ingredient and a bit of Sriracha mayo.
- Fold the side first and gently but firmly roll them up.
