Roasted Ratatouille Pasta Salad

A sunny ratatouille pasta salad that makes itself: roast everything on one sheet pan, toss with fusilli, olives and sundried tomatoes, and serve cold. No mayo, no fuss, just pure Mediterranean summer on a plate.

This is the sunnier of pasta salads! Great for summer potluck and camping dinner, plus it’s easy to tweak with a little extra feta cheese. Everything goes on one sheet pan: eggplant, zucchini, red pepper, onion, garlic, a generous drizzle of olive oil and a scatter of thyme, and the oven does the rest. While the vegetables roast until lightly coloured, you cook the pasta, and by the time both are done, you’re essentially just tossing everything together. Plus, Kalamata olives, sun-dried tomatoes, and another glug of olive oil will add extra flavour. It travels in the heat, tastes even better the next day, and the only decision left is whether to crumble feta on top.

What is Ratatouille?

Ratatouille is a classic Provençal dish from the south of France, a slow-cooked vegetable stew traditionally made with eggplant, zucchini, tomatoes, peppers and herbs. The name comes from the French verb touiller, meaning to stir or toss, which is pretty much the whole technique. It’s peasant food at its finest; humble ingredients, big flavour, and endlessly adaptable. This pasta salad takes all those Mediterranean vegetables, roasts them on a sheet pan until caramelized and gorgeous, and tosses them with pasta for a dish that’s every bit as flavourful as the original, just considerably easier to make.

Why This is the Perfect Potluck & Camping Pasta Salad

The secret is simple: no mayo. Most pasta salads are one warm afternoon away from disaster, but this one is dressed in olive oil, which means it sits happily on a picnic table, travels in a cooler without drama, and tastes just as good three hours later as it did when you made it. It’s also entirely meat-free, which makes it one of those rare dishes that works for everyone at the table without any special accommodations. Make it the night before, keep it in the fridge, pull it out when you arrive, done.

Variations & Substitutions

The beauty of ratatouille is that it’s more of a technique than a strict recipe; swap vegetables based on what’s in season or what’s in your fridge. Cherry tomatoes roasted in the pan add a juicy burst of sweetness. Mushrooms work beautifully alongside the eggplant. Yellow squash can replace one of the zucchini for extra colour. For the pasta, any short shape works: penne, rotini, orecchiette or farfalle all hold the roasted vegetables well. Want to add protein? Grilled chicken, canned chickpeas or a tin of good tuna all fold in nicely without disrupting the Mediterranean vibe.

How to Store and Make Ahead

This pasta salad is one of those rare dishes that genuinely improves overnight: the pasta absorbs the olive oil and roasted vegetable juices, the flavours deepen, and everything melds together beautifully. Make it up to 24 hours in advance and keep it covered in the fridge. Before serving, give it a good toss and a fresh drizzle of olive oil; the pasta tends to soak it up as it sits. Leftovers keep well for up to 3 days in an airtight container in the fridge.

A vibrant, no-mayo pasta salad packed with oven-roasted ratatouille vegetables: eggplant, zucchini, red pepper, onion and garlic; tossed with fusilli, sundried tomatoes and kalamata olives in a generous drizzle of olive oil.

Ingredients
 
 

  • 600 g fusilli pasta
  • 2 zucchini , cut into thick pieces
  • 1 eggplant , cut into thick pieces
  • 1 red bell pepper , cut into thick pieces
  • 1 white onion , cut into thick pieces
  • 4 garlic cloves , minced
  • 5 tbsp olive oil
  • 10 sundried tomatoes in oil , cut finely
  • 12 Kalamata olives
  • 5 sprigs thyme
  • salt and pepper

Instructions
 

  • Preheat oven to 220°C (425°F). Cut the eggplant, zucchini, red pepper and onion into bite-sized pieces and place on a large sheet pan with the garlic. Drizzle generously with olive oil, scatter over the thyme, season with salt and pepper, and toss to coat.
  • Roast for 25–30 minutes, turning once halfway, until the vegetables are tender and lightly coloured at the edges.
  • Cook the fusilli in well-salted boiling water according to package instructions. Drain, rinse briefly with cold water to stop cooking, and transfer to a large bowl.
  • Add the roasted vegetables, sundried tomatoes and kalamata olives to the pasta. Drizzle with extra olive oil and toss everything together well. Taste and adjust seasoning.
  • Refrigerate until ready to serve; the flavours improve after at least 30 minutes in the fridge.

Make it ahead: This salad is actually better the next day, the pasta absorbs all the roasted vegetable flavours overnight. Make it the evening before your potluck or camping trip, and it’s ready to go.
Extra feta: Serve crumbled feta on the side, it keeps the salad dairy-free for those who need it and lets cheese lovers pile it on. That said, if you know everyone’s on board, toss it straight in. It gets a little creamy and salty throughout the salad, and it’s absolutely worth it.
Sundried tomatoes: Use the oil-packed variety if you can; they’re softer, richer, and packed with flavour. And don’t throw away that oil. Drizzle the leftover flavoured oil straight over the pasta salad for an extra hit of sunshine in every bite.
Serving tip: Give it a good toss and a fresh drizzle of olive oil just before serving; the pasta tends to absorb the oil as it sits.
