Mini Banana Pancakes (gluten-free)

These mini banana pancakes are sugar, egg and gluten-free! A healthy breakfast to make the kids/babies on the weekend. The leftovers make a fantastic snack, a must-have recipe for any new parents!

This mini banana pancakes recipe comes from a fellow Canadian ex-pat, a good friend, and a mom to two lovely girls, Jordan. She was the one who showed me this recipe back in the days when I only had one baby. The original recipe was with white flour and eggs, but I’ve changed it a bit over time. Now, I’ve made them ultra-healthy without any eggs! Replace the white flour with buckwheat and almond flour; with the bananas in there, there is no need for thickening or extra sugar. Although, now that my kids are more significant, I’ve added some maple syrup because one’s culture must prevail.

Baby Led Weaning

A popular way to go with babies nowadays is this BLW! This recipe is the perfect start for babies! It’s a super healthy bite and easy to bring around as a snack! I would make a plain whipped cream without sugar, just a drop of vanilla extract, to serve these pancakes for breakfast. To make babies, dip them into something fun! Or it could also be an unsweetened apple purée dip. Babies love to dip!

Variations

The bananas and almonds will give thickness and sweetness to the pancakes. This recipe is unique because it does not contain the usual white flour, baking powder and egg, but rest assured, the bananas will prevail and make their magic! Of course, if you want to make it the usual way, you can substitute the buckwheat for regular flour. You can also add an egg to make it slightly more flexible. Or exchange the coconut oil for any other fat! But at the end of the day, all mini banana pancakes are winners to the little ones! And secretly to grown-ups, too!

Storage

If you want to keep some for later, you can keep them in the fridge for 3-4 days without a problem. If you freeze them, add parchment paper between them and add them to a freezer bag. This way, you can make ultra-fast pancakes in the toaster for mornings on the go!

Ingredients

  • 2 bananas ripe
  • 200 ml milk
  • 100 g buckwheat flour
  • 50 g almond flour
  • 1 tbsp coconut oil
  • ½ tsp vanilla extract
  • 1 pinch salt

Instructions

  • Add all the ingredients to a food processor and blend until smooth.

  • Let it rest 5-10 minutes in the fridge.
  • Blend once again before usage.
  • Add a small amount oil or butter in crepe pan or non-stick flat-bottom pan.
  • Add a bit of the batter (6cm round) on the sides of the pan at medium-low heat until golden on each side, about 1-2 minutes.
