An easy breezy way to fill up the stomach that everyone loves! A crispy-crusted Express Pizza made with pre-done flaky dough in under 30 minutes. This recipe will save your life more than once on a busy day with the kids.

The beauty of this Express pizza is its simplicity, and God knows… every mom or dad runs out of ideas and time for meals. You know when you reach the: ‘When is the food ready? Dad?’ or the ‘I’m Starving, Mom, What do we eat?’. This dish is so easy and fast to make and tastes delicious with its multi-layered dough. With this one, you’ll save the day more than once, and everyone can add their favourite toppings to it.

Yes! Get a Pre-done flaky dough from the supermarket; it’s so much easier than making your own. Choose one of those pre-done rectangle-sized or round that contains simply flour, water and butter. Aim for the less ingredients version and the freshest. Forget about the one saying pizza; those premade pizza doughs are always way too rough. This flaky pastry is simply divine, and I’ll show you how to make a mini crust to make it pizza-like! It’s like biting in a cheesy croissant!

The Technique

To prevent the flaky dough from puffing up too much, in the center part, you’ll need to make holes with a fork all over the pizza dough before adding the ingredients. To make the crust, I suggest cutting lightly, 1 cm away from the sides, to make it puff (Check the Video in the recipe card). This means your toppings will stick to the center too.

Secret Ingredient

If you want a fancy tomato paste to highlight your pizza, aim at the Mutti tomato paste (Italian brand, I’m not sponsored), which they make in a small tube. They sell worldwide, and it’s simply the best in my option. You don’t want the usually too-liquid pizza base. Plus, always good to have it in the pantry! Simply a suggestion.

Mozzarella

I like to use fresh mozzarella; it simply makes the nicest strings, and I love its fresh bite! Don’t forget to salt it up to get yourself the yummiest pizza! One big fresh mozzarella ball cut into small pieces would do wonders for a single pizza.

Ingredients

  • 230 g pre-done flaky dough rectangular or round
  • 150 g mini mozzarella balls or one big one cut into small pieces
  • 75 g Mutti doble tomato concentrate
  • thyme
  • salt

Instructions

  • Add the pre-done flaky dough on a parchment paper or oven-proof covered rack. Cut lightly the contour of the dough (1 cm away from the side) with a knife.
  • Make holes with the help of a fork all over the dough, not on the sides.
  • Add the tomato paste and spread it over the pizza.
  • Add the small pieces of fresh mozzarella, thyme, and salt and cook in the oven for 15-17 minutes at 200°C (400F°) or until the crust is golden.
