Since pickle brine is naturally high in sodium, you can cut back on added salt while still getting that well-seasoned taste that makes chicken salad irresistible.

Shredded Chicken Wrap With Cucumber
Ingredients
- 600 g chicken breast
- 2 tbsp Greek yogurt or sour cream
- 1 tbsp mayonnaise
- 1 tsp garlic powder
- salt and pepper
Seasoning Mixture
- 1 dill pickle medium sized
- 2 tsp dill pickle juice
- 2 scallion
- 1 branch celery
Extras
- cucumber
- cherry tomato
Instructions
- If you don't use leftover roasted chicken: Spray cooking oil, garlic powder and salt on the chicken breast and air fry at 200°C (400°F) for 15 to 20 minutes or bake in the oven for 25 minutes or until cooked through.
- Add all the ingredients for the seasoning mixture to a small food processor and process until homogenous.
- Once the chicken breast is cooked through, shred it with a fork. Add it to a bowl with the green seasoning mixture, Greek yogurt, and mayonnaise, and combine. Add salt and pepper, if needed.
- Cut the cucumber lengthwise for extra crunch with a peeler.
- Assemble the wraps with shredded chicken, cucumber, cherry tomatoes, and whatever your heart desires.
