Mexican Tradition

Mexican Quesadillas come from the Spanish word “queso,” which means cheese, so it’s a no-brainer that they must be cheesy! Although in Mexico City, you sometimes have to ask for extra cheese in your quesadillas, as it may not be included, in the rest of the country, cheese is usually the central star. Other fillings, such as mushrooms (huitlacoche), squash blossoms, or chorizo, are also common, depending on the region.

Quesadilla Technique

The technique is pretty straightforward. You make a quick omelette, add half the cheese to it, put the tortilla wrap on top, and turn it with the help of a plate. Just like they do in Spain to flip their famous tortilla de patata, you slide it right back into the non-stick pan, add the filling of your choice, cheese, and fold. You let toast the tortilla wrap for about 30 seconds on each side to get a lovely, crispy finish, and let the cheese melt to perfection.

Guacamole express

Usual sides for quesadillas are the famous guacamole, sour cream, pico de gallo or Chipotle cream. So here are a few ideas of sides to serve with your breakfast quesadillas:

  • Pico de Gallo, or salsa cruda, is a mixture of diced fresh tomatoes, spring onions, serrano peppers, lime, and cilantro.

The beauty of this breakfast recipe is that it’s easy to customize. You can add any veggies you like. Here are a few more ideas:

  • Use corn or blue tortilla wraps.

Equipment

  • non-stick pan 24cm (7")

Ingredients
  

  • 8 eggs
  • 4 medium-sized tortilla wraps wheat or corn
  • 150 g bacon bits or 4 slices
  • 100 ml milk
  • 115 g cheddar cheese ,gouda or mozzarella (any young firm cheese)
  • salt and pepper

Guacamole Express

  • 1 avocado
  • ½ lime
  • ½ diced tomato
  • tajin spice mix *optional
  • salt

Instructions
 

  • Fry the bacon bits in a small non-stick pan until crispy. Reserve and wipe the pan with a paper towel.
  • Whisk two eggs with 1 tablespoon of milk, a pinch of salt, and pepper in a small bowl until smooth and well combined.
  • Heat a small nonstick pan over medium-high heat. Pour in the eggs and stir immediately for about 10 seconds, just until they’re halfway cooked. Scrape down the sides, sprinkle some cheese, and place a tortilla on top. Let it cook for 30 seconds until the bottom is set.
  • Flip the quesadillas with the help of a big plate or a large spatula.
  • On one half of the quesadilla, add the bacon bits and more shredded cheese. Fold it in half. Cook until crispy and golden. Flip and do the same on the other side.
  • Assemble the quick guacamole by mashing the ripe avocado with lime juice and mixing it with the tomato bits, Tajin, and salt.
  • Cut the quesadilla into three sections.
