These Pomegranate Meatballs are the ultimate holiday appetizer that both kids and adults absolutely love! Ultra-moist and tender thanks to ricotta cheese, they’re coated in a sweet and tangy pomegranate molasses glaze that’s irresistible. Best of all, they’re incredibly easy to prepare in advance; make the meatballs in advance, then add them to the simmering glaze for 5 minutes to warm them before serving. Keep them warm in a fondue pot for potluck-style holiday gatherings, and top with juicy pomegranate arils, fresh parsley, and sesame seeds for a stunning presentation.

Why Add Ricotta to Meatballs?
Adding ricotta cheese to meatballs is a game-changing secret for achieving incredibly moist, tender meatballs that stay juicy even after baking. Ricotta’s high moisture content and creamy texture help prevent the meat from drying out during cooking, while its mild flavour doesn’t overpower the other ingredients. The cheese also acts as a binder, helping hold the meatballs together without making them dense or overly crumbly, as too many breadcrumbs can. This technique is common in Italian cooking and results in meatballs that are lighter and more delicate in texture.
What is Pomegranate Molasses?
Pomegranate molasses is a thick, syrupy reduction made from pomegranate juice that’s been cooked down until it becomes concentrated and intensely flavoured. It has a beautiful balance of sweet and tart with a slightly tangy, fruity complexity that adds depth to both savoury and sweet dishes. Common in Middle Eastern and Mediterranean cuisine, pomegranate molasses is used in marinades, glazes, salad dressings, and dips. You can find it in Middle Eastern grocery stores, specialty food shops, online, or the international aisle of most well-stocked supermarkets.

Personal Note
This recipe holds a special place in my heart; it’s what my mom made for our Christmas buffet every year! She’d keep the meatballs warm in a fondue pot all night long, adding a splash of water if the glaze got too thick. The kids always loved them because they’re on the sweeter side. While I usually keep sugar low for kids’ meals, the holiday season is when everything is permitted, and these festive meatballs are absolutely worth it. They bring back so many warm memories of family gatherings, and now I’m making them for my own family to continue the tradition!

Pomegranate Meatballs Appetizers
Ingredients
- 400 g ground beef or veal
- ½ onion minced
- 150 g ricotta cheese
- 70 g breadcrumb
- 1 egg
- salt and pepper
Pomegranate Sauce
- 150 ml ketchup
- 150 ml honey or maple syrup
- 80 ml pomegranate molasses
- 2 tbsp brown sugar
- 1 tbsp balsamic vinegar
- salt and pepper
Instructions
- Sauté onions in olive oil until tender, about 5-7 minutes. Cool completely.
- Mix cooled onions with ground meat and all meatball ingredients. Mix gently with your hands until just combined—don't overmix. Roll the mixture into small balls, about 2-3 cm in diameter, and place them on a parchment-lined baking sheet.
- Preheat your oven to 375°F (190°C). Bake the meatballs for 20 minutes until cooked through. Turn on the broiler and broil for 1-2 minutes until the tops are nicely browned and caramelized. Watch carefully to prevent burning.
- While the meatballs are baking, combine all the sauce ingredients (pomegranate molasses, ketchup, honey, brown sugar and vinegar) in a large skillet or saucepan. Bring to a simmer over medium heat, stirring occasionally.
- Add the baked meatballs to the simmering sauce and gently toss to coat. Let them simmer together for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly. Transfer to a serving dish and garnish with fresh pomegranate arils, chopped herbs, or sesame seeds if desired. Serve warm with toothpicks.
