My kid’s favourite! The ‘Oh mighty’ pineapple and coconut popsicles recipe is a real hit! Frankly, it’s almost too simple to make a recipe out of it, but they did make my kids happy for so long. So, I needed to share the goods! These pineapple and coconut popsicles worked well with many variations, such as mango, passion fruit, strawberry, or kiwi. All winning combos! It’s a yummy popsicle and will provide tremendous relief for the teething ones!

A Format for Toddlers

Minis need to snack often to keep their blood sugar regulated. Otherwise, a crisis might come your way. The best solution is to give them a snack that won’t fill them up too much to ruin dinner later, but will keep them satisfied until dinner. These little frozen bites are a perfect size, and they’ve got a bit of coconut fat in them, which will make them last a while and give you a chance to make dinner in peace. Plus, it keeps them refreshed on a hot summer afternoon! The perfect snack!

Coconut Milk

When choosing your coconut milk in the store, try to get a no-sugar one; there is no need for extra sugar since tropical fruits are filled with natural sugars. You could also use coconut cream for excess fat if the baby needs to gain weight, but always ensure no added sugar is added to the product. Coconut milk is filled with nutrients for babies, including fat, which the baby needs to build a healthy brain and skin. Another fun fact about coconut milk is that it helps mildly constipated kids soften their stool! So, a magic ingredient!

Homemade vs. The Store

In modern times, whatever you buy in the supermarket is filled with sugar, colouring or preservatives. Plus, making them with the actual fruit gives your kids the much-needed fibres they often omit in industrial versions. Also, the size is never thought of for little ones; there is no need to make giant popsicles that result in a mess and fill them up for the whole day, which is not the idea of a snack. Get those new tiny-sized popsicle containers or a simple ice cube tray to prevent them from getting too much (here is the link to my silicone mould for mini popsicles).

Variations

As mentioned above, these pineapple and coconut popsicles are suitable for many or a mix of fruits. Our personal favourites are mango and pineapple. Mango brings an extra smooth texture and colour to the popsicles. On another note, the third ingredient, salt, is essential to bring out the flavours! It’s just a pinch, but it will bring out the sweetness of both our tropical ingredients. Of course, you can omit the salt if it’s intended for little ones under one year old.

Definitely! Double the recipe to fit into a larger popsicle mould. For a more sophisticated, adult-friendly flavour without alcohol, try adding a splash of fresh lime juice, a hint of grated ginger, or a sprinkle of toasted coconut flakes.

Tropical fruit and Coconut teething popsicles for babies are made with just two ingredients and will refresh and relieve your little one simultaneously.

Ingredients
 
 

  • 200 g pineapple or any tropical fruit (mango, kiwi, etc.)
  • 150 ml coconut milk
  • 1 pinch salt *optional

Instructions
 

  • Put all ingredients into a blender and blend until homogenous.
  • Pour into popsicle mould and freeze for a minimum of two hours.

Alternative fruits: mango, strawberry, kiwi, passion fruit (seedless), etc.
