Oven-Baked Chicken Flautas (Healthy & Easy)
These Baked Chicken Flautas, the rolled cousin of tacos, are a delicious way to use leftover roasted chicken! Rolled in corn tortillas and baked until golden and crunchy, topped with avocado, tomatoes, and more.

These Baked Chicken Flautas (also called taquitos) are corn tortillas stuffed with shredded chicken and baked until golden! Traditionally, flautas are deep-fried until crunchy, but this lighter, baked version gives you all that satisfying crunch without the extra oil. The beauty of flautas is how customizable they are: the spice level is completely adjustable (add extra hot sauce if you like heat, or keep it mild for the kids), and once they’re baked, you load them up with all the usual toppings: avocado, tomatoes, lettuce, sour cream, salsa, cheese, and whatever else your family loves!
Ingredients for the Chicken Filling

For the ultimate filling, I love to use a whole chicken wing boiled for one hour until the meat is incredibly tender and literally falling off the bone. Unlike chicken breast, which can sometimes become dry, wing meat stays succulent and is easy to shred. If you have leftover roasted chicken, this is also the perfect way to give it a second life! While I prefer the richness of the wings, you can easily use any chicken cuts you have on hand to make these flautas a quick and versatile weeknight meal.

Little Nomad’s Secret: Using Reduced Chicken Broth
The real magic happens after the chicken is cooked: don’t toss that liquid! I boil the remaining broth until it is concentrated and packed with deep, savoury flavour. Adding a splash of this liquid gold back into the pan with your sautéed onions and garlic is the secret to keeping the shredded meat moist while it crisps up in the oven. I always make a big batch and freeze the extra concentrated broth in silicone ice cube trays; they are the perfect “flavour bombs” to pop into future recipes whenever you need a boost of moisture and taste.

How to Roll Flautas Without the Tortillas Cracking
The secret to perfect flautas is warming your corn tortillas before rolling: this makes them more flexible and prevents them from cracking! You can heat them one at a time in a dry skillet over medium heat for about 15-20 seconds per side until they’re soft and pliable, or wrap a stack in a damp paper towel and microwave for 30-45 seconds. Once they’re warm, they’ll roll easily around the filling without tearing. Work quickly while they’re still warm and flexible: if they cool down and start cracking again, just reheat them briefly!
The Rolling and Baking Technique
The secret to a perfect flauta is ensuring your tortillas are flexible before you start; once they are warm, they roll easily and hold their shape without cracking. As you fill them, place each one seam-side down on your tray or grill rack, allowing them to sit snugly against each other. Letting them touch helps keep them tightly closed during the bake without needing toothpicks! Give the tops a light spray of oil to help them achieve that golden crunch, then bake until the sides turn crisp. I personally love them when the edges are crunchy, but the centre remains slightly flexible, but if you prefer a “hard shell” texture all the way through, simply leave them in for a few extra minutes until they are fully toasted.

Serving Suggestions for a Family Feast
The best way to serve flautas is family-style with all the toppings laid out so everyone can customize their own! Arrange the baked flautas on a large platter and set up a toppings bar with bowls of lettuce, tomatoes, avocado, cheese, sour cream, and more. Put the extra hot sauce and jalapeños on the side so those who love heat can spice things up while keeping it mild for sensible kids. Serve alongside Mexican rice, refried beans, or a simple side salad for a complete feast.

Baked Chicken Flautas
Ingredients
- 16 small corn tortillas
Chicken Filling
- 1.5 kg chicken wings aim for 2 cups (400g) of shredded chicken (roasted chicken leftovers or other precooked cuts)
- ½ onion minced
- 2 garlic cloves minced or mashed
- 100 ml chicken broth
- 1 tbsp olive oil
- salt and pepper
The Toppings
- 1 avocado diced
- ½ lime to squeeze over the avocado
- 1 tomato diced
- sour cream
- hot sauce of your choice
- lettuce of your choice
- salt and pepper
Instructions
- Place your chicken wings in a pot of boiling water and simmer for 1 hour, until the meat falls off the bone. Strain the liquid (save it for soup!) or reduce it (and freeze it), then shred the tender wing meat.
- In a pan, soften the diced onion. Once soft, add the garlic, then add your shredded chicken. Pour in a bit of the chicken broth (from the boiled wings or premade) to keep the mixture juicy and flavorful. Let the chicken absorb most of the liquid and take it off the fire.
- Warm your corn tortillas in a pan for a few seconds on each side (or a quick zap in the microwave with a humid towel) until they are flexible and easy to roll without cracking.
- Place a generous spoonful of the chicken filling into each warm tortilla. Roll them tightly and place them seam-side down on a baking tray or grill rack to keep them from opening up.
- Lightly spray the flautas with oil and bake at 180°C (350°F) for about 15 minutes, or until the edges are golden and the shells are crispier. (AIR FRYER: same temperature for 10 minutes)
- Serve them hot, piled on a bed of shredded lettuce, topped with diced tomato, and avocado drizzled with lime. Finish with a dollop of sour cream, your favourite hot sauce, salt and pepper.
