Using round-grain rice (Bomba), as in traditional paella, this recipe requires minimal stirring; just let the flavours meld together naturally. Perfect for busy weeknights and makes fantastic leftovers for lunch the next day. Plus, it’s easily adaptable: swap in different proteins, add different vegetables, or adjust the spice level to suit your family’s taste!
Round Grain Rice

Round grain rice is perfect for one-pot meals because it absorbs liquid while maintaining its shape. Unlike long-grain rice, it can soak up to three times its weight in flavorful liquid without becoming mushy. The best varieties for paella-style dishes include Bomba, Albufera, and J. Sendra rice (the Spanish gold standard), as well as easily found Arborio and Calasparra rice. This type of rice doesn’t need to be rinsed; it needs to be slightly fried initially. One Pot Sausage Rice
Equipment
- skillet or large pan
Ingredients
- 600 g fresh pork sausage cut into pieces, (equiv. 8 medium-sized sausages)
- 500 ml chicken broth homemade best, keep a little extra on the side.
- 250 g short grain rice bomba or arborio
- 100 g tomato paste (tomate frito or sofrito best)
- 1 bell pepper sliced
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tsp sweet paprika Pimenton de la Vera
- salt and pepper
Instructions
- Add olive oil to a pre-heated skillet or large pan over medium heat. Let it heat for a minute before adding the sausage. Cook until the sausage is lightly browned.
- Make a well in the center of the pan, pushing the ingredients to the side of the pan. Add another drop of olive oil and the rice. Stir and cook until the rice turns translucent, about 1-2 minutes.
- Add the tomato paste (tomate frito), garlic, broth, paprika, pepper, and salt, mixing well. Bring to a gentle boil and cook for 10 minutes without stirring.
- Add the peppers on top of the rice mid-cooking and let cook for another 8-10 minutes, ensuring there's enough liquid until the rice is tender. Add an extra splash of broth or water if the mixture becomes too dry.
- Test the rice – once it's al dente (almost cooked) and the liquid has thickened and is barely present, remove from heat. Cover with a clean kitchen towel and let rest for 5 minutes before serving.
