Mini Swedish Gooey Cake Hearts
This Valentine Swedish Sticky Chocolate Cake features an ultra-moist, slightly gooey center that’s pure chocolate heaven; not a lava cake, just perfectly sticky!

If you’ve been following our “Little Nomad” adventures for a while, you know I love a recipe with a story. This one comes straight from my precious Swedish friend, Wiveca. In Sweden, Kladdkaka is more than just a dessert; it’s a national treasure. The name literally translates to “sticky cake,” and once you take your first bite, you’ll understand why.
I’ve spent many afternoons over the years testing different versions, but for Valentine’s Day, I wanted to do something a bit more intimate. I’ve transformed Wiveca’s classic recipe into these adorable mini heart-shaped cakes. They are perfectly portioned for a romantic dinner for two—or, if you’re like us, a sweet surprise for the kids to find after school!
The Technique: Mastering the Perfect Sticky Center

The magic of this Scandinavian cake is all in the baking time, and you need to keep a close eye on it! Traditionally, this cake is made in a 25cm round mould and isn’t very thick. This Valentine version uses smaller, thicker heart-shaped moulds, so the time may vary depending on your mould’s shape. Once you hit the 16-minute mark, start checking for doneness with a toothpick; but here’s the key difference from other cakes: you actually want it to come out with a few moist crumbs clinging to it, not completely clean.

The Cooling of the Cake
Don’t panic if the cake falls slightly in the center as it cools; that’s completely normal and part of the kladdkaka charm! Let it rest in the mould for at least 10 minutes, then gently remove it from the silicone mould. This resting time allows the structure to set just enough so it doesn’t fall apart, while keeping that signature sticky, gooey center intact.
What to Serve with Kladdkaka
The traditional Swedish way to serve kladdkaka is beautifully simple: a light dusting of powdered sugar and a dollop of lightly whipped cream on the side. The cool, airy cream is the perfect contrast to the rich, dense chocolate cake. Fresh berries, especially raspberries or strawberries, add a tart brightness that cuts through the sweetness, making them an ideal pairing for Valentine’s Day. Vanilla ice cream is another classic option that melts into the warm, sticky center for pure indulgence.

Mini Swedish Gooey Cake Hearts
Equipment
- 1 silicone heart mould or 25cm large standard one
Ingredients
- 3 eggs
- 250 g sugar
- 150 g all-purpose flour
- 150 g unsalted butter
- 1 tsp vanilla sugar
- 5 tbsp cacao powder 100% pure
- 1 pinch salt
Instructions
- Preheat your oven to 180°C (350°F). Place your heart-shaped silicone mould on a sturdy baking sheet before filling; this makes it much easier to move in and out of the oven without spilling!Tip: Even though silicone is non-stick, a very light brush of melted butter or cooking oil ensures these gooey hearts pop out perfectly.
- In a small bowl, cut the butter into small bricks and microwave until melted.
- In a medium bowl, whisk the eggs and sugar with an electric whisk for about 4 minutes until they double in size and turn pale.
- In a big bowl, sift in the flour, vanilla sugar, cocoa powder, and salt. Gently fold the mixture together with a spatula.
- Add the wet ingredients to the dry ones and the melted butter, and stir until well combined.
- Divide the batter evenly among the heart shapes.
- Bake for about 18 minutes, start checking the doneness at 16 minutes.The Secret: The edges should be set, but the centres should still look a bit "wobbly" or underbaked. This is what creates that signature Swedish fudge texture!
- Let the hearts cool completely in the silicone mould. If you try to pop them out while warm, they might break.

These look great and I’m thinking of making these for Valentine’s Day. Do you think they would work with an aluminum non stick muffin pan with 12 hearts since I don’t have a the silicone? Thanks
If your pan is non-stick, it should work. Just be sure to grease it thoroughly to help with removal, and allow the cakes to cool completely before attempting to take them out.
