Fresh Mini Coco Mango Floats

Mini Mango Floats with coconut milk are a refreshing, no-bake tropical dessert for summer. Layers of mango, whipped coconut cream, and cookies create a chilled treat ideal for any occasion.

Mango Float is a traditional Filipino dessert that is served cold or frozen. It consists of layers of fresh mango pieces, graham cookies, and whipped cream made with condensed milk. However, this version is slightly different because it’s made in individual vessels and uses coconut milk instead of condensed milk, making it a tad more tropical. These Mini Mango Floats are easy to make, fluffy, fruity, and simply irresistible. The kids will love digging into the many layers of textures.

How to Whip Coconut Milk?

This step is super simple, but here are a few tricks to ensure it works. First, refrigerate the coconut milk before whipping it and don’t shake it before opening it. Then, separate the liquid part from the solid coconut paste and keep the liquid for a smoothie. You have to whip the thicker part, the cream, and voila! Also, I like to whip the cream and coconut milk in separate bowls and merge them in the end, simply because they take a different time to get to the right consistency. The coconut milk won’t get as much fluff as the whipped cream.

The usual cookie choice would be the famous Graham Crackers, but any cookie would do. I’ve used my leftover digestive cookies, and they worked wonderfully. Please ensure your cookies fit into the glass vessels you want to use. But if not, crack them up and layer them overlapped; it will taste as good. Filipino mango float calls for a few hours of rest in the refrigerator, softening your cookies and making them easier to dig through.

Oxidation of Mangoes

Oxidation of mangoes is manageable with this dessert; since it’s prepared 3 to 4 hours in advance, the mangoes don’t have time to change colour in the cold refrigerator. But if you want them to stay longer in the fridge, here are a few tricks to keep them vivid yellow:

  • Please don’t use an overly ripe mango; it oxidizes faster.
  • Add a little bit of lemon or lime to your diced mango.
  • Cover the mango floats with plastic wrap.

This way, you are sure to keep its lovely bright colour!

Variations

For this summer treat, you could use different fruits, such as strawberries, blueberries, pineapple, cherries, or a combination of fruits.

As previously mentioned, this no-bake dessert can be eaten cold or frozen, but I prefer it cold. I would choose the cold one because it has three lovely textures: smooth, juicy, and crunchy. When it’s frozen, you lose some of the texture and taste.

The traditional Filipino mango float uses condensed milk instead of coconut milk, so you can switch it up, using the same quantity.

Storage

If you have too much or want an ultra-cold dessert, freeze it. It’s better to cover it with plastic wrap beforehand.

Ingredients
 
 

  • 1 mango diced
  • 12 Graham Crackers or any dry cookies.
  • 200 ml heavy cream
  • 150 ml coconut milk (cold) use the solid part.
  • ½ tsp vanilla extract

Instructions
 

  • Whip the cold coconut milk in a bowl.
  • Whip the heavy cream in another bowl with the vanilla extract until stiff peaks.
  • Merge both whipped mixtures.
  • In the small glass vessels, add a bottom layer of cookies, followed by a layer of whipped cream and diced mango.
  • Repeat the layers.
  • Finish it up with crumbled cookies.
  • Let it cool in the refrigerator for three to four hours before serving.

    Love the summer for the different varieties of mangoes 🥭 in season. Who can go wrong with coconut and fresh mangoes. I probably add some sweetened condensed milk for added sweetness. Thank for sharing your recipe.
