Mini Buckwheat Banana Pancakes
These mini banana pancakes are sugar-free, egg-free, and gluten-free! Perfect for a healthy weekend breakfast for kids or babies, with leftovers doubling as a great snack. A must-try recipe for new parents!

Those mini banana pancakes were a hit with my little ones. Kids love them; they have no added sugar (if no maple syrup was added). Simply thicker and naturally sweeten by to the bananas. The original recipe uses white flour and eggs, but I’ve changed it a bit to make it gluten—and egg-free. Now that my kids are bigger, I’ve added some maple syrup, but as toddlers, they devoured them without any added sugar.
Baby Led Weaning
A popular way to go with babies nowadays is this baby-led weaning method! This recipe is the perfect start for babies! It’s a super healthy breakfast and keep the leftovers for snacking! I would make a plain whipped cream without sugar, just a drop of vanilla extract, to serve these pancakes for breakfast, but it could also be an unsweetened apple purée dip. Babies love to dip!
Ingredients

Buckwheat Flour: Nutrient-rich, gluten-free alternative to traditional flours. It’s packed with fibre, which aids digestion, and it’s a good source of essential minerals like magnesium, iron, and zinc. Buckwheat also contains high levels of antioxidants, which support heart health by improving circulation and reducing inflammation. Making those pancakes a bit firmer but a whole lot healthier.
Almond Flour: This is basically blanched almonds ground into a powder. It adds extra protein and a sweet, nutty touch to the pancakes. This grain—and gluten-free flour is high in omega-3 unsaturated fats, which benefit children’s development.

Banana: Add natural sweetness and moisture, resulting in a softer and fluffier texture. When mixed into the batter, bananas create a rich, tender consistency that eliminates the need for added sugar or excessive fats. The fruit’s natural sugars also enhance caramelization, giving the pancakes a golden-brown colour and subtle fruity flavour. Additionally, bananas contribute extra nutrients like potassium, vitamin B6, and fibre, making the pancakes healthier.
Coconut Oil: Coconut oil offers several health benefits for kids. It’s rich in healthy fats, which provide quick energy and support brain development. Coconut oil also contains lauric acid, which has antimicrobial properties that help boost the immune system. It could be replaced by butter or a neutral oil.
Milk is a powerhouse of essential nutrients for children’s growth and development. It’s an excellent calcium and vitamin D source, crucial for building strong bones and teeth. The protein in milk contributes to muscle growth and repair, while other nutrients like vitamin B12 and riboflavin help with energy production and the development of the nervous system.
Vanilla Extract: a popular ingredient that enhances the flavour of many dishes, especially baked goods and desserts.



Other Breakfast Ideas for Kids

Mini banana pancakes
Ingredients
- 2 bananas
- 200 ml milk
- 100 g buckwheat flour
- 50 g almond flour
- 1 tbsp coconut oil
- ½ tsp vanilla extract
- 1 pinch salt
Instructions
- Add all the ingredients to a food processor and blend until smooth.
- Let it rest for 5 to 10 minutes in the fridge.
- Blend once more before cooking.
- Add a small amount oil or butter in crepe pan or non-stick flat-bottom pan.
- Add a bit of the batter (6cm round) on the sides of the pan at medium-low heat until golden on each side, about 1-2 minutes on each side.

Our kids LOVE pancakes of any kind, and this recipe was no exception. We topped it with plain greek yogurt, hemp hearts and maple syrup and we all enjoyed them. We had to sub whole wheat flour for the buckwheat because i can’t find that anywhere, but they were still delicious.
