These mini banana pancakes have been served at my house every weekend for years. They were one of my kids’ first solid breakfasts and are still a top contender on our breakfast table! It’s a super-easy, quick recipe that is easily customizable and adaptable for younger kids. I served them with unsweetened whipped cream and/or apple purée to cut the sugar. Equipment

  • crepe pan or non-stick flat-bottom pan

Ingredients
 
 

  • 200 g all-purpose flour
  • 50 g almond flour
  • 2 bananas
  • 2 eggs
  • 1 tsp cinnamon
  • 1 pinch salt

Instructions
 

  • Blend all the ingredients together until smooth and homogenous.
  • In a crepe pan, on medium low heat, make small pancakes. Cook until you see a few bubbles appear, flip and cook again.
