Ingredients
 
 

  • 4 sweet potato
  • 200 g ground pork
  • ½ onion
  • 100 ml tomato purée
  • 100 ml water
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 tsp cumin powder
  • 1 tsp oregano
  • 1 tsp paprika
  • 6 drops tabasco or your favorite hot sauce (can be adjusted to your preference)
  • salt and pepper

Toppings

  • 100 g grated cheese any fresh cheese, cheddar, mozzarella, gouda, Monterey Jack, etc.
  • 1 tomato diced
  • 1 scallions
  • 1 shoestring fries *optional (just for added crunch)
  • hot sauce *optional

Instructions
 

  • Clean and make an incision halfway through the sweet potatoes, brush with olive oil and salt and wrap in aluminum foil.
  • Bake the sweet potatoes in the Air Fryer at 200°C (400°F) for about 35 minutes or until tender (in the oven, around 50 minutes).
  • Meanwhile, cook the ground pork and onion in olive oil in a large pan over medium-high heat until the meat is cooked through.
  • Once the meat is no longer pink, stir in all the spices, garlic, tomato purée, tabasco, and water. Let the mixture simmer for a minute or two until all the ingredients are well combined.
  • Once the potatoes are cooked (tender when inserting a knife) open them up, add the meat and grated cheese, and air fry for another 3 minutes to melt the cheese.
  • Add the toppings: diced tomato, scallions and shoestring fries.
