Baked Beetroot Burger with Lentils

The Lentil and Beetroot Burger is a delicious vegetarian option that even meat lovers will enjoy! The baked or air-fried patties are packed with nutrients and served with a citrus-dill mayo, avocado, tomato, and lettuce.

This beetroot burger is a brilliant way to introduce kids to lentils and beets without them even noticing! A hearty blend of lentils, beetroot, chickpeas, onion, garlic, and smoky Spanish paprika creates a flavourful, earthy patty. Paired with a creamy citrus-dill mayo, it strikes the perfect balance of tang and smoothness, an ideal vegetarian burger for the whole family!

The Patty

I recommend blending the onion and garlic first to avoid large chunks in the patties. The rest of the ingredients don’t need to be perfectly smooth; pulse the mixture until you’re happy with the texture, but stop well before it turns into a paste. You want some whole lentils peeking through for a bit of texture and visual appeal.

Unlike a typical meat patty that you can press together with your hands, this beetroot burger mixture is on the loose side. Use a spoon to shape the patties directly onto your oven mat or parchment paper; this actually makes it easier to customize the size and thickness. You can even shape them into hearts for Valentine’s Day!

Baking or Air Frying

Whether you bake or air-fry the patties, a non-stick mat or parchment paper is your best friend here. If using an air fryer, opt for perforated parchment to allow proper air circulation. Once the patties come out, let them rest for a minute before lifting them with a spatula; they firm up quickly as they cool.

You can easily roast your beetroot by wrapping it in aluminum foil and air frying it at 200°C (400°F) for about 30 minutes, or roasting it in the oven for about an hour. Pre-cooked or vacuum-packed beetroot works perfectly well too and is a great time-saver.

Variations

The recipe uses chickpea flour as a binder, which keeps the patties gluten-free and adds a subtle nuttiness. If you don’t have any on hand, plain all-purpose flour works as a substitute.

The toppings are customizable to your liking; for this version, I’ve used a smooth avocado, fresh tomato and crunchy lettuce, but you could have some extra crunch with pickled onions, pickles, or a lovely cheese of your choice, even fresh goat cheese, would do magic in this beetroot burger.

Storage

Once cooked, you can store them in an airtight container in the refrigerator for up to 3 days, or freeze them for up to 3 months, for a quick and healthy meal anytime! If you freeze them, separate them with parchment paper to prevent them from sticking together.

Ingredients

Beetroot Patties

  • 2 beets pre-cooked and peeled
  • 400 g lentils pre-cooked (your favourite variety: green, brown, red or yellow are all good)
  • 400 g chickpeas Pre-cooked or canned
  • 120 g garbanzo flour or all-purpose flour
  • ½ onion
  • 2 garlic cloves
  • 1 egg
  • 1 tbsp balsamic vinegar
  • 1 tsp Spanish smoky paprika or regular paprika
  • salt and pepper

Citrus Mayonnaise (quantities to your liking)

  • mayonnaise
  • lemon juice and zest
  • fresh dill

Toppings

  • avocado
  • tomato
  • lettuce

Instructions
 

  • Add the onion and garlic to a food processor and blend until finely shredded.
  • Add the remaining patty ingredients and pulse until the mixture is combined but still has some texture; you want bits of lentil visible throughout. Do not over-blend.
  • Using a spoon, shape the patties onto a lined baking sheet or non-stick mat.
  • Oven: Bake at 200°C (400°F) for 18 minutes.
    Air fryer: Cook at 200°C (400°F) for 12 minutes, using perforated parchment.
  • Meanwhile, mix together the mayonnaise, lemon juice, lemon zest, and fresh dill to make the citrus mayo.
  • Allow the patties to rest for one minute, then assemble your burgers with your choice of toppings and serve immediately.
