Jack-O-Lantern Pumpkin Pancakes

These Jack-O’-Lantern Pumpkin Pancakes make a fun and festive breakfast or snack! Let the kids decorate them however they like. Thanks to almond powder and pumpkin purée, they’re naturally sweet and moist—no sugar needed! Making them perfect for the little ones. Add your favourite toppings for sweetness, or keep it sugar-free with unsweetened whipped cream.

The cinnamon, nutmeg and ginger give it its autumnal flair! It’s my version of pumpkin spice mix, but if you prefer a more elaborate one with extra clove and five-spice, go ahead and use your pumpkin spice mix. (Here is an excellent homemade recipe I found online.)
The Technique
Making the Jack-O-Lantern form will be the most challenging part of this recipe! You’ll need to get a metal cookie cutter, grease it, and pour a thin layer into it. Don’t let it set completely; leave it for about 15 seconds until the batter sets enough, then remove the cookie cutter. This way, it slides right off! Of course, while using hand protection, whether it’s a kitchen cloth, mittens, or tongs, it will slide right off!
Gluten-Free Version

The recipe is easily modified to become gluten-free. Swap the flour for almond powder. I let it sit in the fridge for 10 minutes. They say the longer, the better, but frankly, I usually make pancakes in the morning with my two little hungry monsters, and they won’t wait long to get those tummies filled up, so I blend and make them right away, and they turn out great.
Baby Friendly
These Jack-O-Lantern Pumpkin Pancakes are suitable for toddlers. They will thrive without added sugar and with unsweetened whipped cream to dip them in! They can explore these on the go or at the morning table.

Equipment
- non-stick or pancake large pan flat bottom
Ingredients
- 75 g pumpkin precooked
- 100 ml milk
- 30 g flour
- 20 g almond flour
- 1 egg
- 1 tbsp pumpkin oil or olive oil
- 1 tsp cinnamon powder
- ¼ tsp nutmeg *optional
- ¼ tsp ginger powder
- salt
Instructions
- Blend all the ingredients in a blender until homogenous.
- Let the mix rest in the fridge for 10-20 min.
- Add the greased metallic cookie cutter in a lightly greased pan on medium-high heat and pour a thin layer of batter into it.
- Cook for 30 seconds to set the form, then remove the cookie cutter and let it cook until golden; flip and let it cook once more.
