Hungarian Beef Stew (Pörkölt)

Difference Between Hungarian Stew and Goulash
While many people use the terms interchangeably, authentic Hungarian stew, Pörkölt and Goulash (Gulyás) are quite different dishes. Pörkölt is a thick, hearty stew with minimal liquid, more like what most Americans think of as “goulash.” It focuses on tender meat slowly braised in its own juices with plenty of paprika, no added flour, creating an intensely flavoured, almost dry stew. True Hungarian Gulyás, on the other hand, is actually a soup with a much thinner, brothy consistency and some extra veggies like carrots are added.

Hungarian paprika isn’t just any paprika; it’s the soul of this dish, and there’s a world of difference between the authentic versions and what you’ll find in most grocery stores. Usually, you’ll use a base of sweet paprika (the most well-known variety). Still, depending on your preference, you can easily tweak the recipe by adding an extra tablespoon of smoky or spicy paprika. Each array will bring its own character to the stew.
The brightness of the colour can differ slightly depending on which type you choose. What makes Hungarian paprika so exceptional is the specific pepper varieties grown in regions like Szeged and Kalocsa, combined with traditional processing methods that create complex layers of flavour that regular paprika can’t match.

Hongarian Stew (Pörkölt)
Equipment
- Dutch oven
Ingredients
- 1 k beef (chick or brisket) cut into small cubes
- 750 ml Beef broth
- 1 yellow onion
- 1 bell pepper
- 2 garlic cloves
- 4 tbsp Hungarian Sweet paprika
- 2 tbsp sunflower oil
- 2 tbsp tomato concentrate or paste
- ½ tsp caraway seeds
- 1 bay leaf
- salt and pepper
Instructions
- Heat oil in a Dutch oven over medium-high heat. Add beef cubes and brown on all sides. Remove beef and set aside.
- In the same pot, add diced onions and bell pepper and cook for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
- Add the Hungarian paprika, tomato concentrate and caraway seeds, mixing well with the meat just enough to cover the meat. Be careful not to burn the paprika as it will turn bitter.
- Pour in enough beef broth to come about 3/4 of the way up the meat cubes. Bring to a gentle simmer.
- Simmer for 1.5-2 hours, stirring occasionally, until the beef is fork-tender and the sauce has thickened.
- Season with salt, pepper and parlsey.
