Commercial Fruit Leather: What’s Often Hiding Inside?

  • Mainly Fruit Puree/Concentrate: Usually cheap apple or pear base, not always the vibrant fruit pictured.
  • Sneaky Added Sugars: Lots of corn syrup, glucose, etc. – not just fruit’s natural sweetness.
  • Mystery Thickeners & Gelling Agents: To get that chewy texture.
  • Preservatives & Artificial Colours/Flavours: To extend shelf life and make it look “better.”

Homemade Fruit Leather: Why It’s Better!

  • 100% Real Fruit Power! Just ripe fruit, pure and simple. We use a bit of maple syrup to avoid refined sugars, but you could use agave syrup, honey or nothing.
  • Total Ingredient Control: You choose what goes in—no artificial colours, flavours, or preservatives.
  • Nutrient Boost: Keeps more of the amazing fibre, vitamins, and natural goodness from whole fruit.
  • Flavour Adventures: Mix any fruits you love! Perfect for using up seasonal gems or ripe leftovers.
  • Healthy Snack You Trust: A wholesome, delicious treat you feel great giving your little nomads.

Why Chia Seeds in Fruit Leather?

chia seeds

Curious why we add those tiny chia seeds to our fruit leather? It’s not just for an extra nutritional boost! These amazing seeds act as a natural gelling agent, helping to thicken your fruit puree and achieve that perfect, pliable texture without any added pectin. This means less drying time and a beautifully consistent fruit leather every time. Learn more about the magic behind these powerful little seeds in this article.

Lemon Splash

A little splash of lemon or lime juice goes a long way in your fruit leather! Beyond brightening the flavour with an extra fresh touch, its natural acidity works wonders to prevent certain fruits from oxidizing and turning brown, ensuring your homemade leather keeps its vibrant, beautiful colour.

Choosing Your Fruits: The Best and Trickiest Options

fruit leather rolls

Regarding fruit leather, not all fruits are created equal – some are naturally gifted at this whole “turning into leather” thing, while others need a little coaxing. Your best bets are naturally pectin-rich fruits like apples, strawberries, and stone fruits (peaches, apricots, mangos), which practically turn themselves into perfect leather with minimal fuss.

The trickier ones? Super watery fruits like watermelon or citrus will need help from pectin or a pectin-rich fruit buddy to avoid ending up with fruit soup instead of leather. Here’s where chia seeds become your secret weapon: if you’re using low-pectin fruits, like blueberries, raspberries, kiwis, etc., add an extra tablespoon of chia seeds to help bind and thicken.

Pro tip: Mixing a high-pectin fruit with a low-pectin one often produces the best flavour and texture combination.

Troubleshooting

Making fruit leather is simple, but sometimes you notice a few quirks. Remember that different fruits yield different results due to their unique composition and water content. For example, a blueberry puree will naturally dry thinner and be more delicate than a mango puree, which has more pulp and natural thickness. If your fruit leather turns out too brittle, it likely spent too long in the oven, or your puree was spread too thin; if it’s still sticky and needs a little more drying time.

Storing Your Homemade Fruit Leather Rolls

Once your fruit leather is perfectly chewy and ready to roll, proper storage is key to keeping it fresh and preventing it from turning into cardboard or a sticky mess. Store it in an airtight container at room temperature for up to a week, or pop it in the fridge for up to a month. These babies freeze beautifully for extended storage for up to 6 months.

Homemade fruit leather made easy with natural ingredients and a secret chia seed boost for extra nutrition and perfect texture. Choose your favourite fruits, blend, dehydrate in the oven and enjoy chewy, naturally sweet rolls that beat store-bought every time.

Equipment

  • large oven rack

Ingredients

  • 500 g fruits (frozen or fresh) blueberry, mango, strawberry, etc.
  • 25 g chia seeds
  • 1 tbsp lemon juice *optional, to prevent oxidation and browning of fruit.
  • 1 tbsp maple syrup *optional (honey, agave syrup)
  • salt

Instructions

  • If you use frozen fruits, pass them under cold water until thawed.
  • Blend all ingredients until completely smooth.
  • Pour the mixture onto parchment-paper-lined baking sheets. Gently tap the pan to release air bubbles and prevent holes from forming.
  • Place in oven at the lowest temperature setting (around 50°C/120°F) for 6-12 hours, or until the center is set and no longer sticky to touch. The exact time depends on the thickness of your mixture and the water content of your fruits. Start checking at 6 hours, but don't be surprised if it takes up to 12 hours for perfect leather consistency.
