Homemade Chicken Wing Soup with Rice

Nothing beats the comfort of homemade chicken soup with a rich chicken wing broth. The tender meat is afterwards shredded, and veggies and rice are added for a timeless family favourite.

Whether you need to warm up or recover from a cold, nothing beats a comforting bowl of fuming soup—especially if it’s made with homemade broth made of chicken wings slowly cooked to perfection. Afterwards, the wing’s meat from the broth is added to the soup with extra veggies and rice. Make a big batch of this chicken wing soup—kids will ask for more!

The difference in taste between commerce-bought and homemade broth is enormous! Plus, no additives or preservatives and lower sodium are always a must. To make a simple broth, I like to use chicken wings; here’s why:

  • Deep Flavor – Wings perfectly balance meat, skin, and bone, producing a flavorful and clear broth.
  • High Collagen Content – Chicken wings’ skin, joints, and connective tissues break down during simmering, creating a rich, silky broth packed with gelatin. This is great for gut health, joints, and skin.
  • Affordable and Accessible – Chicken wings are often cheaper than whole chickens or other bone cuts, making them a budget-friendly option for homemade broth.
  • Quick to Cook – Unlike larger bones (like a whole carcass), wings break down relatively fast, producing a delicious broth in a shorter time.

Veggies and Aromatics

A few basic ingredients for this broth to keep it simple are carrots, leeks, and celery, which will elevate this soup. A bouquet garni of bay leaves, thyme, sage, and whole peppercorns adds a warm and aromatic touch. Here are a few tips on making your soup’s broth clear and ultra tasty:

  • Sear the wings first in olive oil until brown; this gives extra depth to the broth.

  • Don’t boil; simmer. Slow and steady bubbles are the key to a clear broth.
  • A secret trick from Chefs: Always add a touch of apple cider vinegar at the end of cooking your soup. Just a tablespoon is enough. It will balance out the soup’s natural sweetness and enhance its taste. Don’t worry—you won’t feel the acidity; trust me.

Variations

The chicken wing soup could undoubtedly be customized to your preferences. I kept it simple: no fuss, but you can add different veggies and aromatics or switch the rice to quinoa or noodles. You are the chef; the main idea was to prepare homemade chicken soup from wings.

Storage

This homemade chicken soup is excellent, but sadly, the rice will get mushy if stored and lose its lovely appearance. If you want to conserve this, I suggest storing the broth only in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months.

Homemade Chicken Wing Soup with Veggies and Rice

A homemade broth made with chicken wings makes the base of this soup. Served with the meat from the wings, carrots, leeks, celery and rice to warm you up on a cold winter night.

Ingredients
 
 

Broth

  • 700 g chicken wings
  • 2 l water
  • 1 carrot
  • 1 leek
  • 1 celery
  • 2 tbsp olive oil or butter
  • 1 bouquet garni
  • 10 peppercorn

The Soup

  • 100 g long grain rice
  • 2 carrots
  • 2 leeks
  • 1 celery
  • 150 g chicken from the wings
  • 1 tbsp apple cider vinegar
  • salt and pepper

Instructions
 

  • Bring a Dutch oven or big pot to high heat, and sear both sides of the wings in olive oil until golden.
  • Add the veggies, bouquet garni and peppercorn and cover with water.
  • Bring it to a simmer and let it cook for 1 hour.
  • Double-filter the broth, first with a strainer, and then a fine-meshed sieve to make it clear. Let the wings cool down before collecting the meat from the bones.
  • Cut the soup veggies into small pieces and rinse the rice in a fine-meshed sieve until the water gets totally clear.
  • Bring the broth once more to a simmer, then add the carrots, leeks, celery and rice, and let simmer for 10 minutes.
  • Add the chicken and a touch of apple cider vinegar in the end.
