Almond Flour

The almond flour in this recipe serves multiple purposes beyond just replacing some regular flour. These naturally sweet and protein-packed banana muffins are made with extra brown-spotted bananas, almond flour, and Greek yogurt. They can be sweetened with an optional touch of maple syrup and spiced with cinnamon, vanilla, and nutmeg.

Ingredients
 
 

  • 180 g all purpose flour
  • 4 bananas
  • 2 eggs
  • 80 g Greek yogurt
  • 50 g almond flour
  • 80 ml maple syrup *optional
  • 1 tbsp coconut oil
  • 2 tsp baking powder
  • ½ tsp vanilla extract
  • ½ tsp cinnamon powder
  • tsp nutmeg *optional
  • salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease well.
  • In a large bowl, mash 4 very ripe, brown-spotted bananas until smooth.
  • Whisk in Greek yogurt, melted coconut oil, maple syrup (if using), vanilla extract, and eggs until well combined.
  • Mix the dry ingredients into the wet ingredients: almond flour, all-purpose flour, baking powder, cinnamon, nutmeg, and a pinch of salt.
  • Divide batter evenly among muffin cups.
  • Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
