If you’re after a fun, festive snack or lunch before the annual candy hunt, these Halloween Sandwiches with Eggs will surely be a hit with kids and adults! The egg salad filling is made with eggs, mayonnaise, a tangy splash of pickled brine juice, and a touch of pumpkin. These egg sandwiches are as tasty as they are perfect for the spooky season. Use a Jack-o’-Lantern press or a simple cookie cutter and fork to shape them into a Halloween masterpiece in no time!

The Filling

For a vibrant orange filling and an extra boost of vitamins, I used leftover cooked pumpkin—perfect for repurposing your Jack-O’-Lantern scraps! If you’re out of fresh pumpkin, canned pumpkin purée works, too, as long as it’s unsweetened and spice-free. It’s a win-win: the kids get a hidden serving of veggies, and they won’t even notice because of how adorable these sandwiches are!

Here’s my little secret for egg salad: dill pickle brine! A tablespoon or two of this flavorful, tangy liquid adds a delightful briny kick. Sometimes, I have a whole chopped pickle, but since one of my kids is turned off by green bits in his food, I stick to the brine. It replaces most of the salt, so taste before adding any extra. While it’s optional, that extra touch makes the egg salad irresistible!

The Jack-O’-Lantern Press

This press is such a fun accessory for families on any holiday! If you’re interested, I found them online here, and it makes cooking with the kids so much fun. You can use the outer part to cut slices of bread, pita, or any dough and fill them with any sweet or savoury filling you prefer. It’s a quick and easy way to make treats for the kids with minimal fuss. To release the bread from the mould, I use a toothpick to pop it out.

For a neat trick to help the bread stick together when pressed, I use the dumpling method: add a little water to the edges before pressing them together. This technique seals the sandwiches perfectly!

If you don’t want to invest in these presses, no worries! You can still make these spooky sandwiches with a cookie cutter, a knife, and a fork if you want to close up the sides.

To Toast or Not to Toast?

If you like a warm toasted sandwich, forget the pan or toaster for this one because the egg salad will come from your Jack-O’-Lantern’s mouth. You can easily use an Air fryer or oven to grill the bread slightly—so easy! However, you could also serve them without toasting them, mainly if you don’t serve them immediately.

Variations

To give the filling this orange undertone, use butternut squash instead of pumpkin or even carrots. If you like cheese, add some orange cheddar cheese to the eggs.

Alternatively, you can also use tortilla wraps instead of slices of bread, which is a good option if you plan to carve them with a knife instead of the press.

Storage

If you have leftover Halloween Sandwiches, keep them in an airtight container in the fridge for a day or two. They also make excellent breakfast! You can either eat them cold or warm.

These Halloween sandwiches are filled with eggs and pumpkin, which gives them a spooky orange hue, while the dill pickle brine juice adds a twist.

Ingredients
 
 

The Filling

  • 4 eggs
  • 2 tbsp pumpkin purée or pre-cooked
  • 2 tbsp mayonnaise
  • 1 tbsp dill pickle brine juice
  • salt and pepper

The Bread

  • 10 slices of bread
  • ½ tsp butter *optional

Instructions
 

  • Boil the eggs for 12 minutes.
  • Peel the eggs and mash them in a flat-bottom bowl with the pre-cooked pumpkin pieces or purée (unsweetened), the mayonnaise, dill pickles brine juice, salt and pepper until smooth.
  • Cut the slices of bread with the festive presses or cookie cutter and spread some butter, if wanted.
  • Install the buttered slice of bread in the press (check the video below), add the filling, and lightly wet the sides with water to help it stick together. Then, add the top slice and press. (If you don't have the presses, press with your fingers or fork to close the sides.)
  • *Optional – Toast the sandwiches at 200°C (400F) in the Air Fryer for 5 minutes or in the oven until golden.

You can eat them cold or warm. If you make them ahead of time, better serve them non-toasted. 
Have the kids press down with their hands to make the egg salad spill out of the Jack-O’-Lantern’s mouth!
