Green Goddess Dressing / Dip Salad

Okay, let’s keep it PG here; the green in this version of Green Goddess is a whole bunch of fresh basil, chives and spinach, well, capers, too. When I say a lot, it’s a full hand of each. The sauce is filled with greens, barely oil and mayo is used, making it a healthy dressing/ sauce. If you are vegan, substitute the mayonnaise for olive oil. I also suggest that if you want to eat it as a dressing with crunchy lettuce, like iceberg or romaine, don’t be shy! Add plenty of sauce; after all, it’s a healthy one!

If you intend to spread it in a wrap, chicken burger or sandwich, you can always add more oil and make it more liquid.

Variations

Yes, as you saw in the recipes above, there are many ways to make this Green Goddess Dressing / Dip. Some use cilantro, others Greek yogurt, etc. The only rule here is to use loads of fresh herbs and blend them with mayo, avocado, Greek yogurt, or even water; as long as they’re green, it’s okay! This dressing is open to many variations!

Storage

You can easily keep the dressing/dip in the refrigerator for a few days, although its taste will lose its freshness and vivid colour over time. I recommend adding a little tablespoon of olive oil to the dressing to prevent the basil from oxidizing—this way, it conserves better.

Equipment

  • Food Processor

Ingredients
 
 

  • 30 g spinach
  • 30 g fresh basil a handful
  • 10 g chives about 30
  • 30 g cashews a handful
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp mayonnaise can be substituted by olive oil for vegan diet.
  • 1 tbsp nutritional yeast
  • 1 tsp capers
  • 1 lime
  • ½ garlic clove finely chopped
  • salt and pepper

Instructions
 

  • Add all the ingredients to a food processor and blend until smooth, adding a bit more olive oil if needed.
