Why Gruyère and Not Just Any Cheese

Green Asparagus & Gruyère Quiche
Equipment
- 1 quiche mould 25 to 30cm large
Ingredients
- 1 premade pie dough round
- 450 g green asparagus reserve a few long ones for toppings and cut the rest into 3 cm (1 inch) pieces.
- 5 eggs
- 180 ml heavy cream
- 50 g Gruyere cheese comté, Emmentale or Mature Cheddar
- salt and pepper
Instructions
- Press your premade pâte brisée into a lightly greased quiche mould, making sure it fits snugly along the sides. Poke holes across the base with a fork to prevent it from puffing up, then refrigerate for 30 minutes before pre-cooking.
- Set aside a few of the thinnest stems for decoration and cut the rest into smaller pieces. Bring a pot of water to a boil and blanch everything together for 4 to 5 minutes; you want them al dente, tender but with a little bite. Rinse immediately under cold water to stop the cooking and lock in that vibrant green colour.
- Blind bake your chilled pastry at 180°C (350°F) for 8 to 10 minutes until just set. This ensures the base stays crisp once the filling goes in.
- In a bowl, whisk together eggs, cream, salt and pepper until well combined.
- Pour the egg mixture into the pre-cooked crust, add the blanched asparagus pieces and Gruyère on top. Bake at 180°C (350°F) for about 25 minutes, or until golden and just set in the centre.
- Halfway through baking, lay your reserved whole asparagus stems on top if you'd like to showcase that beautiful spring vegetable. Purely optional, but worth it for the visual.
