I created these fun vanilla Funfetti muffins for my daughter’s birthday school celebration. Unlike traditional cupcakes that can be messy to transport and loaded with sugary frosting, these muffins offer all the festive fun with their irresistible colourful sprinkles while keeping the sweetness perfectly balanced. The secret? Cottage cheese makes them incredibly moist and protein-packed without anyone knowing, creating a celebration-worthy and parent-approved treat. They’re easy to grab and go, travel beautifully in lunch boxes, and give kids that exciting burst of colour they love.

Why Cottage Cheese?
These joyful Funfetti Birthday Muffins are made extra special with a secret ingredient: cottage cheese! This clever addition makes them incredibly moist and fluffy and boosts the protein content, helping to keep busy bodies energized longer. Balancing Sweetness with Sprinkles
These muffins are intentionally made with less sugar than traditional recipes to accommodate the sweetness from the colourful sprinkles. They add just the right amount of sugary delight in every bite, allowing us to reduce the overall sugar content in the batter while still delivering that celebratory sweetness kids love. This thoughtful balance means you get all the visual excitement and festive flavour without the sugar overload.
Sprinkles Type
For natural sprinkles, choose brands that use natural food colourings sourced from fruits and vegetables, such as spirulina for green, beet for pink, and turmeric for yellow, rather than artificial dyes. These naturally coloured sprinkles are increasingly easy to find in stores and online, giving you all the festive fun without synthetic additives.



Funfetti Birthday Muffins
Equipment
- regular muffin tray
Ingredients
- 300 g all-purpose flour
- 200 g white sugar
- 200 g cottage cheese
- 115 g unsalted butter
- 70 g sprinkles
- 150 ml milk
- 1 egg
- 1 tbsp baking powder
- 1 tsp vanilla extract
- salt
Instructions
- Preheat the oven to 180°C (350°F).
- Mix all the wet ingredients in a big bowl with an immersion blender, pulsing until homogenous.
- Pass the flour through a sieve, add the baking powder and salt and mix.
- Add the wet mixture to the dry ingredients and mix until well combined.
- Add the sprinkles last, and mix again.
- Top the muffins with a final layer of sprinkles.
- Bake for 25 minutes in the oven or until a toothpick comes out clean.

- Batter consistency: If your batter seems too thick, add a tablespoon of milk at a time, as different flour brands vary in absorption rates. The batter should be thick but scoopable.
- Extra colour: Sprinkles made with colored rice paper work beautifully to add vibrant pops of colour throughout the muffins without adding additional sugar.
- Don’t overmix: Gently fold ingredients together just until combined. Overmixing can result in tough, dense muffins.
- Oven variations: Baking times may vary depending on your oven. At 20 minutes, start checking for doneness with a toothpick test.
