Frozen Yogurt Bars with Raspberry and Oatmeal

Frozen Yogurt Bars with Raspberry and Oatmeal are a deliciously healthy family treat! For a refreshing treat, they’re made with an oatmeal-almond base, maple-infused Greek yogurt, and freeze-dried raspberry.

Don’t we like a healthy and irresistible snack for the little ones? This is my kids’ favourite, and yes, in wintertime, too! These Frozen Yogurt Bars with Raspberry and Oatmeal save the day if they fuzz too much for breakfast! If they are hungry in the afternoon, these come to the rescue! Or simply as an exchange for an empty plate, these make the kids finish their plates in seconds! It is a healthy bite for the whole family, with a lot of flavor and little sugar.

The Oatmeal Layer

Frozen Yogurt, Raspberry and Oatmeal Bars

For this recipe, you can use any cut of oatmeal, whether steel cut, rolled, or instant. The steel cut might result in more of a crunch but will soak some moisture from the yogurt, making it softer. Instant might be gentler on the teeth, especially for the little ones. I’ve used coconut oil to bind the oatmeal and almonds, but it could be switched or mixed with good old butter.

The critical part is to press the mixture into a well-greased recipient or parchment paper. Use a flat-bottom glass to compress the mixture as much as possible, preventing the bottom layer from falling apart.

The Yogurt Layer

The middle layer of the frozen bars is the yogurt, which is plain Greek yogurt; I prefer the Greek variety over regular yogurt because its texture is fluffier and thicker. Nutrition-wise, it’s similar, but here is a detailed article about it if it interests you. I like to control the amount of sugar in yogurts for the kids; I think it needs a tad of sourness coming through, and good quality sugar, in my opinion, is always preferred! So, I’ve added a small amount of maple syrup; being a Canadian, this has always been my sucrose choice! However, you could use honey or agave syrup, too.

Also, I added an optional squeeze of lemon in the yogurt because I love this combo, especially with the raspberries, but this is up to you.

The Raspberry Layer

This is the highlight of this whole dish! It has a potent raspberry taste and is made of freeze-dried raspberries turned into a powder with the help of a mortar or food processor. Freeze-drying keeps the colour and vitamins intact; this is what we want here: a bright red bite with loads of flavour! You can easily find them online or often in the baby section in supermarkets. I recommend raspberry for this bar, but it could also be any freeze-dried strawberry or a mix.

Resting Time

Like frozen yogurt, you do not want the Frozen Yogurt Bars with Raspberry and Oatmeal to be stiff like a rock when you bite into them! So take them out for 5 to 10 minutes before serving. You can eat them with your hands or with cutlery.

Storage

To freeze these Yogurt Bars, you can use any deep container that survives in the cold. Once cold and firm, cut the bars with a sharp knife. You can then transfer them to Tupperware if you’d like. If you stack them up, add parchment paper in between. It’s essential to keep the container closed to prevent freeze-burn.

Frozen Yogurt Bars with Raspberry and Oatmeal are a super healthy and yummy snack consisting of a oat layer, a Greek yogurt with a bit of maple syrup and lemon and a top of raspberry powder.

Ingredients
 
 

  • 2 cups oats steel cuts or rolled
  • 2 cups freeze-dried raspberries
  • 500 g plain Greek yogurt
  • 50 g almond
  • ½ cup almond flour
  • 2 tbsp coconut oil or butter
  • 50 ml maple syrup
  • ½ lemon
  • salt

Instructions
 

  • Add the rolled oats in a big bowl with the crushed almonds, almond flour, liquid coconut oil (heat it in MW if cold and firm) and a pinch of salt; mix.
  • Grease the parchment paper added to a rectangular metallic mould, add the oat mixture, and pressure it down with the hands or flat bottom glass.
  • Mix the yogurt, maple syrup and half the lemon in a bowl and pour over the oat mixture.
  • Add the freeze-dried raspberries to a mortar or food processor and turn them into a powder; add on top of the yogurt layer..
  • Cover and leave in the freezer for a minimum of an hour.
  • Leave out of freezer for 5 minutes before cutting into bars.

    What a cool idea (no pun intended). I was trying to figure out what was going on with the raspberries from the pictures, and when I read they were freeze-dried it all clicked. Such an interesting idea! It’s a great way to go big on the flavours AND keep these easy to make year round. Awesome stuff!

    1. Exactly, super tasty with the deep-freeze fruit! The usual frozen raspberries would lose a lot of take because of the water it contains. This way you get a raspberry explosion guaranteed!
