Feta & Honey Appetizers with Phyllo

If you’ve seen those viral Greek feta appetizers on social media, where a whole brick of feta is wrapped in phyllo, pan-fried until golden, and topped with sesame seeds and honey, you’re going to love this version! I’ve transformed that popular Saganaki-style dish into bite-sized appetizers ideal for parties. Instead of pan-frying, these are baked, which reduces oil use. I’ve also swapped traditional sesame seeds for everything bagel seasoning, adding an extra kick of garlic, onion, and poppy seeds. Finished with a honey drizzle, these feta phyllo bites deliver that same addictive sweet-and-salty combination in a party-friendly format.

Tips for Working with Phyllo Dough
Phyllo dough can seem intimidating, but it’s actually relatively easy to work with once you know a few key tips. The most important rule is that each sheet requires a light layer of fat to create the signature flaky, crispy layers. I personally use an olive oil spray for convenience and even coverage, but you can also brush it on with a pastry brush or use melted butter for a richer flavour. For these feta bites, I used five sheets of phyllo layered together, creating a crisp balance without being too thick or heavy. Don’t worry if the sheets tear a bit; phyllo is forgiving, and small tears won’t affect the final result.
Everything Bagel Seasoning: What’s In It?

Everything bagel seasoning is a popular blend typically containing sesame seeds (white and black), poppy seeds, dried garlic, dried onion, and salt. This savoury mix originated as the topping for, you guessed it: bagels! It works beautifully with feta in this recipe because the garlicky, oniony notes complement the tangy, salty cheese perfectly, while the seeds add a delightful crunch. It’s a modern twist on the traditional sesame seeds used in Greek Saganaki. You can find everything bagel seasoning in most grocery stores, or easily make your own. The combination of savoury seasoning with sweet honey creates that addictive sweet-and-salty contrast!

- Serve Warm: These bites are at their absolute best when served warm from the oven. The contrast between the shattering, crispy phyllo and the softened, salty feta is most prominent right after baking.

Feta Honey Phyllo Appetizers
Ingredients
- 10 phyllo sheets (250g pack) 9oz
- 150 g feta cheese
- 3 tbsp honey
- 2 tbsp everything bagel seasoning or white sesame seeds
- 3 tbsp olive oil spray or use a brush
Instructions
- Layer 5 phyllo sheets, spraying olive oil between each layer.
- Cut your feta block into stick shapes, about 1 cm thick. Place the feta sticks along one end of the layered phyllo pastry.
- Starting from the end with the feta, roll the phyllo tightly around the cheese, creating a long log. Roll firmly but gently to keep the layers intact.
- Spray the top of the roll with a final layer of olive oil and sprinkle generously with everything bagel seasoning. Using a sharp knife, cut the roll into 1 cm pieces.
- Preheat your oven to 200°C (400°F). Place the pieces on a baking sheet lined with parchment paper, spacing them slightly apart. Bake for 15 minutes, or until golden brown and crispy.
- Remove from the oven and let cool for 2-3 minutes. Arrange on a serving platter and drizzle generously with good quality honey just before serving.
