Easy Greek Nachos with Tzaziki
This summer, give your nachos a Greek twist! Corn tortilla covered with cucumbers, olives, feta cheese, garlic-oregano marinated tomatoes, red onions, and tzatziki will highlight the table!

Don’t we all love a convivial nachos plate to share? And a good Greek Salad? Well this is the best of both world coming together! Give a nice twist to your next nachos! Made with oregano and garlic marinated tomatoes and a quick homemade tzaziki. These nachos will go as fast as the original version, guaranteed! Greek nachos are of course best eaten cold in the sun, with sunglasses on. No oven needed on this one! Don’t forget the Kalamata olives to top it all!

Original Nachos
If you think about it, the first Mexican Nachos invented contained only 3 ingredients: fried tortilla chips, cheddar and jalapeños. Later on more toppings was added, and nowadays a zillion different variations exist. Also, did you know the tortilla chip is in fact American? Mexican usually simply fry old unusable tortilla breads to make them, but in the US they made the first factory to produce the chips in bags as we know them. Today a worldwide favourite!
Greek Touch

All the elements of a sunny Greek Salad on top of these nachos is a match made in heaven. Those vegetarian nachos has a whole lot of flavor in there, especially if you give it a side of tzaziki dip! The crunchy corn chips goes to perfection with the Greek flavors. To keep them crips though, better add the tzaziki appart. Plus, instead of the usual mild black olives, use punchy kalamatas olives for a real Greek flair.
Homemade Tzaziki

I usually make my tzaziki from scratch, because it’s easy and fast, plus I love this loaded with fresh cucumber dip version better. Store bought versions often lack this nice cucumber touch but of course you can use them too. For my version, I’ve added a bit of dill to it, but it could be parsley, mint or thyme. If you don’t find plain Greek yogurt, simply use a plain yogurt, the result taste the same, only the texture will be looser. The perfect dip for these Greek Nachos!

Greek Nachos
Ingredients
- 1 cucumber cut into small cubes
- 100 g feta cheese Cut into small cubes
- ¼ red onion Diced finely
- 15 kalamata olive Pitted preferably
Tzaziki
- 2 tbsp Nature Greek yogurt
- 1 cucumber peeled
- ½ garlic clove chopped finely or pressed
- ½ lime
- fresh dill *optional
- salt
Greek marinated tomatoes
- 1 big tomato
- ½ garlic clove chopped finely or pressed
- 1 tbsp olive oil
- 1 tsp oregano
- salt and pepper
Instructions
- Start by making the marinated tomatoes by mixing the tomato, olive oil, garlic, oregano, salt and pepper into a small bowl, mix and reserve.
- Cut half a cucumber and blend with half a garlic clove until liquid. Add salt and pass through a fine-meshed sieve or clean towel and discard the liquid. Mix the cucumber pulp with the Greek yogurt, lime, dill and salt. Mix and reserve.
- Cut all the topping ingredients and add on top of the classic nachos chips with the tzaziki on the side.
