Russian Chocolate Salami (Nut-free)

Don’t be fooled by this Russian Chocolate Salami! No meat is involved here, just chocolate, tea biscuits and fruity marmalade candies—fun and easy to make with the kids and trick a family member.

Russian Chocolate Salami is a fun and easy dessert; even the kids can help. Plus, these make a lovely gift to give away for any occasion. Roll them up in brown paper, and a little bow, and you will have a beautiful gift! However, remember that they should be kept cold because, unlike authentic sausages, they do melt. You can decorate them like authentic sausages and serve them on a traditional wooden cutting board. It’s for sure going to surprise one or two at the table.

Many Versions of Chocolate Salami

This version of chocolate salami is a Russian or, let’s say, the Northern version. They make them with pieces of fruity marmalade candies, which are easy to find, but any jelly candy would do. I think they bring in some colour. They make the sausages a bit more festive. Of course, other versions exist with nuts, like the Sirian version with pistachios. The Italians have an arrangement with or without nuts called Salame al Cioccolato. But if you intend to give it to kids, ensure nobody suffers from allergies.

Although the main ingredient here is plain tea cookies or biscuits, every country has its own version. Here in Spain, they call them ‘Maria’ cookies. They’re the typical commercial cookies they serve with coffee or tea. So, be ready for this plain, bland white cookie to get a fun makeover!

Rolling Technique

You’ll want your sausage to be super round because the rounder, the more realistic! For this recipe, you’ll roll the sausages first with a sushi carpet or wooden table mat. Once the resting period in the refrigerator is over, you’ll reform the sausages with oven paper and a plane scrapper or similar to keep them as round as possible. Storage

These Russian Chocolate Salami will melt if they are too warm. So keep them in the fridge for up to 2 weeks, and if you want to keep them longer, no problem, they will last up to 2-3 months in the freezer. Also, protect them in double plastic wrap and an extra layer.

Ingredients
 
 

  • 180 g tea biscuits
  • 150 g marmalade candies jelly candy (not sour)
  • 100 g butter
  • 100 g condensed milk
  • 2 tbsp cacao powder

The topping powder

  • 2 tbsp powdered sugar
  • 2 tbsp starch (corn, potato, rice, etc.)

Instructions
 

  • Cut the tea biscuits into small pieces by hand (or mash them in a big plastic bag).

  • Then, cut the marmalade candies into small pieces and add to the cookie bowl.
  • Add the butter, condensed milk and chocolate powder to a saucepan and warm up at medium-low until the butter is melted. Keep turning to prevent burning the mixture.
  • Add the melted chocolate mixture to the biscuit mixture and mix.
  • Add half the mixture to a big piece of plastic wrap and start rolling with your hands to make a cylinder. Then, use a sushi mat or similar to make it rounder.
  • Make it with the other half again, then reserve it in the refrigerator for 3 to 4 hours.
  • Once cold and firm, take parchment paper and a scraper and push underneath the sausage to shape it perfectly round (Check video).
  • Take off the plastic and cover it with the topping powder mix twice.

Notes

Cover the sausages with the starch-sugar powder twice; the sugar will get absorbed in the first round.
Use a sharp knife to cut the sausage.

    Chocolate salami is very traditional here in Italy too, especially at Easter and Christmas. The Italian version is slightly different and doesn’t have the candies in it. I love the idea especially for kids. On my to-make list!
