Easy Cheesy Potato Waffles

Cheesy Potato Waffles is a savoury breakfast that is perfect and easy to customize with whatever topping you prefer. Extra sharp cheese was added for some extra crips and flavour to these fun bites.

Whether you pile them high with toppings or enjoy them plain, these waffles are a crowd-pleaser. Perfect for family brunches or lazy weekend mornings, they bring a little taste of the UK and Ireland to your table.

Mashed or Grated?

You can go either way! But if you have leftover potatoes, try mixing them with some grated potato for extra texture.

Here are the two results, which will vary depending on the texture and flavour you’re after:

Grated Potatoes: Waffles made with grated potatoes are more like hash browns in texture—crispy on the outside with a soft interior. The potatoes hold together well and offer a nice bite, making the waffles extra crispy.

Mashed Potatoes: Waffles made with mashed potatoes have a creamier texture. They tend to be softer and more uniform in flavour, with a crisp outer layer from the waffle iron but a smoother inside. The mashed version is perfect for using leftovers.

However, for today’s version, I kept it easy-breezy and grated potatoes with the smaller holes of a cheese grater (Check the video below).

Type of Potato

The best type of potato for making potato waffles depends on the texture you are looking for:

  • Russet Potatoes (Idaho Potatoes) are the go-to for crispy potato waffles. Their high starch content and low moisture help the waffles become extra crispy on the outside while remaining fluffy inside. They are for both grated and mashed potato waffles and offer a sturdy texture.
  • Yellow Potatoes (Yukon Gold Potatoes) have a medium starch content and are a great option if you want a more buttery, creamy texture in your waffles. They are perfect for mashed potato waffles and balance fluffiness and creaminess.
  • Red Potatoes are waxy, with low starch and higher moisture content, so they don’t rise like russets. However, they can work well for softer, mashed potato-style waffles or for waffles where you want a more tender bite.

Mixing the red and yellow potatoes would work wonderfully. Even a purple potato in the mix would give the waffles some lovely colour!

With or Without the Skin?

The skin gives the waffles extra crunch. Did you know the skin of a potato contains up to 12 times the amount of antioxidants as the flesh? Especially with russet potatoes, the skin is thicker, resulting in a much crunchier finish. But no worries if the kids are not into coloured bits in their waffles; peel them up.

Topping Ideas

What goes on top of your cheesy potato waffles is unlimited! Making a brunch for a bunch of people? Why not add a few options in the center of the table for each to choose their favourite toppings? Here are a few ideas:

  • Creamy Sour cream, Greek yogurt, Skyr, or Quark.
  • Fresh tomatoes, cucumbers or avocados.
  • Crispy bacon bits, ham or smoked salmon.
  • Irresistible poached or scrambled eggs.
  • Fresh chives, scallions or basil leaves.

Variations

We’ve covered the potato aspect of variations, but you can adjust the side kicks to your liking.

Cheese: This recipe uses sharp cheddar, but any firm, slightly aged cheese would do. Here are a few suggestions: Gruyere, Compte, Parmesan, or Gouda.

All-Purpose Flour: You could make the potato waffle gluten-free by switching the flour to rice flour, which would add a bit of extra crunch.

Olive oil: This golden oil can be replaced by any vegetable oil, such as sunflower, canola, avocado, or even butter.

Spices: The recipe suggests solely nutmeg to keep it simple, but you could add onion powder, paprika, cayenne, thyme, etc.

Storage

Those cheesy potato waffles are perfect candidates for the freezer. Wait until they cool down, add them to an air-tight plastic bag and freeze for up to 3 months. You can pop the frozen waffles out and directly add them to the toaster. If you have a larger quantity to make for brunch, broil them in the oven shortly.

These Potato Waffles are packed with aged cheddar for a savory, crispy finish. Top them off with chive sour cream, fresh tomatoes, and bacon bits for a savoury breakfast.

Equipment

Ingredients
 
 

  • 4 large potatoes (one per person) russet or yellow
  • 100 g aged cheddar or any sharp cheese
  • 60 g flour or rice flour
  • 2 eggs
  • 1 tbsp olive oil
  • nutmeg *optional
  • salt and pepper

Toppings

  • bacon pieces
  • sour cream or plain yogurt or Skyr
  • tomato
  • chives or scallions

Instructions
 

  • In a big bowl, grind the raw (with or without skin) potatoes and cheese with the smaller holes of a mandoline or cheese grater. Squeeze the excess liquid from the potato and discard it.
  • Add the flour, egg, oil, nutmeg, salt and pepper and mix.
  • In a pre-warm waffle maker, oil the elements lightly, then add the potato mixture for 10 to 15 minutes until no more vapour comes out and the waffles are golden. (It's better not to open it before 10 minutes, or it could break the waffles.)
  • Cut the chive and mix with the sour cream and salt. Then, add the toppings of your choice to the waffles.

If you make them ahead, toast them in the toaster or briefly broil them in the oven before serving them warm and crisp.

    1. Yes, but a simple squeeze with the hands is sufficient. There is no need to remove with a cheesecloth.
