A tangy, slightly sweet Danish remoulade, the secret sauce that makes a hot dog or burger truly unmistakable. Mayo and Greek yogurt keep it creamy without feeling heavy, while curry powder, turmeric, and chopped pickles add that signature golden colour and briny crunch.

Ingredients
 
 

  • 150 g mayonnaise
  • 3 tbsp Greek yogurt
  • 2 green onions
  • 1 big dill pickle or two smaller ones
  • ½ tsp capers
  • 1 tsp dijon mustard
  • 1 tsp fresh dill *optional
  • ½ tsp curry powder
  • tsp turmeric powder
  • 1 pinch sugar
  • tsp garlic powder *optional
  • salt

Instructions
 

  • In a small food processor or blender, blend the dill pickle, capers, fresh dill, and green onions until finely chopped. Squeeze out the excess liquid if needed, this keeps the sauce from turning watery.
  • In a medium bowl, mix together the mayonnaise, Greek yogurt, and Dijon mustard until smooth.
  • Stir in the curry powder, turmeric, garlic powder and salt until fully incorporated.
  • Fold the blended pickle mixture into the creamy base until evenly combined.
  • Transfer to a bowl or bottle, cover, and chill for at least 1 hour before serving. This rest is what lets the sauce deepen in colour and develop its full flavour.

  • This sauce improves after a short rest in the fridge; the curry and turmeric colour deepens, so make it at least a couple of hours ahead if you can.
  • Fresh herbs are easy to customize in this sauce. Dill is a lovely optional addition, but chives or parsley work just as well if that’s what you have on hand.
