Pickled Veggies and Cream Cheese Pinwheels

These vibrant veggie pinwheels are little swirls of joy! Packed with crunchy goodness and creamy cheese, they’re the kind of snack that disappears fast, whether it’s a pool party, a potluck platter, or a sunny picnic. Easy to make, fun to eat, and totally customizable!

Vegetarian Pinwheels

These pinwheels are perfect for vegetarians, and swapping in vegan cream cheese turns them into a delicious vegan treat! I love the blend of crunchy and smooth textures, with the sweet and sour pickled veggies perfectly counterbalancing the creamy cheese. Want more flair? Add peppers or your favourite microgreens in the center for an extra crunch!

Cream Cheese Spread

For the cream cheese spread, I added chives for an extra tangy flavour. If chives aren’t your thing, swap them for parsley or dill or leave them out altogether! I opted for full-fat cream cheese for extra creaminess, but a light version works great if you’re watching calories. A squeeze of lemon adds a zesty tang, but that’s totally up to you!

The Pickled Veggies

I made the marinade the way I do my Banh Mi Sandwiches: by mixing half rice vinegar and maple syrup, and a little soy sauce (tamari or fish sauce). This makes wonders in a sandwich! You could even add a touch of hot chilli peppers to the marinade if you like a little heat. The carrot is cut into tiny sticks, which you can use with the instrument shown in the video (see below) or a simple cheese grater or mandoline. The veggies must be marinated in this juice for at least 1 hour but no longer than 2 hours. Otherwise, you’ll get super saggy veggies; we like them to hold up a bit.

Variations

You can easily substitute the rice vinegar for the Pickled Veggies and Cream Cheese Pinwheels marinade with apple cider vinegar. Soy sauce is also easily exchangeable for tamari or fish sauce; it’s your salt and umami. Lastly, maple syrup can be replaced with honey or simple sugar. Depending on everyone’s pantry and taste or dietary preferences, all these options would result in a lovely, sweet and sour pickled veggie mix.

The Rolling Technique

Remember, firm and thigh is what you aim for here! You can spread the cream cheese all over the tortilla wrap and the pickled veggies. The cucumber and alfalfa are arranged sushi-style in a line on the third of the tortilla to make them in the center (Check the video below).

Storage

You’ll want to wrap the rolls in plastic to keep the form and prevent the tortilla from drying up. One hour of refrigeration is plenty because they are creamy. Therefore, they hold better than, let’s say, a ham and cheese roll-up.

Vegetarian Roll ups made of chive cream cheese, pickled carrots and onion with crunchy cucumber and alfalfa sprouts in its center! Delicious and colourful pinwheel appetizers!

Ingredients
 
 

  • 3 tortilla wraps large
  • 1 cucumber cut into thin sticks
  • 1 handful alfalfa sprouts or micro-greens

Cream Cheese Spread

  • 200 g cream cheese
  • 1 handful chives
  • ½ lime or lemon
  • salt and pepper

Veggies

  • 2 carrots cut into thin sticks
  • ½ onion finely sliced
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 1 tbsp soy sauce tamari or fish sauce

Instructions
 

  • Mix the marinade for the pickled veggies in a small bowl: rice vinegar, maple syrup and soy sauce.
  • Cut the carrots into fine sticks and slice the onion. Add the marinade, cover and let rest in the refrigerator for 1 to 2 hours.
  • Make the cheese spread by mixing all the ingredients in a small bowl. Cover it and let it rest in the refrigerator until needed.
  • Assemble the sandwich: spread the cheese over the tortilla wrap, add a light layer of pickled veggies and the cucumber and alfalfa in the lower 3/4 of the tortilla and roll it up firmly. Make the same with all the tortilla wraps.
  • Envelop each roll in plastic wrap and let rest in the refrigerator for 1-2 hours.
  • When ready to serve, unwrap the rolls and cut off the ends, then cut them into small pinwheels.
