Corn Fritters with Ham and Feta (Pan and Air Fried)

Corn Fritters with sweet ham, feta, and chives is a gluten-free bite made with a combo of chickpea and rice flour for a crunchy yet moist interior! Prepared using two cooking methods: Air Frying and Pan Frying.

Corn Fritters

This is a fantastic way to use any leftover sweet corn cobs! I’ve used cans for this recipe, but fresh corn would be great, too! A nice contrast with all that sweet corn is a nice salty feta cheese—my favourite summer combo! Plus, I’ve added bits of ham to make some extra protein for the little ones. These corn fritters are a complete dish in a single patty!

Gluten-Free Patties

Corn Fritters (gluten-free)

I love this mix of chickpea and rice flour for patties! Chickpea flour brings in this sweet side and binds the ingredients together well, while rice flour helps bring a crunch to the cakes when fried in the pan. There is nothing like a soft, moist interior patty with a crunchy finish!

Kid-Friendly

These were made with kids in mind—a no-brainer, knowing most kids like sweet corn cobs. I like these to be served as a patty, making the kids break them with their hands and dip them in the sour cream or creme fraiche. Kids enjoy a dip!

Air Fryer vs. Pan Frying

Air Fried patties

The pan-fried version is the winner because of its textures: It creates a moist and fluffy interior and a crunchy golden crust on the exterior. The Air fryer will save you a few calories, but the visual result isn’t as pleasing as pan-fried. The Air fryer dries up the patty, producing a tasty but dryer version.

Variations

While researching for this recipe, I saw a lot of recipes with aged cheddar, so if you dig it, go ahead! I also got inspired by these lovely Mexican Corn Cobs they serve with Crumbled Feta and Hot spices (Tajin). So, if you dig a little spice, add your favourite hot sauce or spice on the side or directly in the patties! (If no kids are around). Also, if you dig fresh cilantro, add a bit to the dip; it would fit perfectly! Without saying, you can use whatever aromatics you prefer, whether it’s basil, cilantro, dill, parsley, etc. I choose chives because it brings an extra crunch.

To Serve with

The corn fritters are a complete meal; I would serve maybe two patties with a lovely green salad. You can easily keep them in an airtight container in the fridge for up to 3 days and bring a few for lunch at work or even as a quick snack.

FAQ

Can I use regular flour instead of chickpea and rice flour?

Yes, use a cup of regular flour if you wish.

Can I use creamed corn instead?

Yes! But you’ll need to calibrate the water and add a bit less.

Can I freeze the fritters?

For several weeks, you can freeze them, cooked or uncooked, in an airtight container. To defrost, heat them in the microwave or on a pan long enough to cook through.

Can I make bigger patties or smaller ones?

Yes, of course! If you use the Air fryer, adjust the time.

Baby-Led Weaning Version

If you intend to make these for the little one, you can cut on the feta to lower the sodium content.

I cobbled these fritters together with some leftover ham and sent it in the kids school lunches this week. They were such a nice departure from the usual ham sandwich!
