This chipotle slow-cooked shredded beef is a simplified approach to the melt-in-your-mouth texture of popular birria tacos, without the hunt for three varieties of dried chillies. Using rich oxtail cuts and chipotle peppers in adobo, this simplified recipe delivers tender, fall-apart meat with subtle smoky undertones that won’t overwhelm sensitive palates. The long, gentle cooking process creates incredibly succulent beef that shreds effortlessly. Serve it in tortillas with melted cheese, onions, and cilantro, with a side dip of the leftover aromatic broth.

Why Oxtail Cut?
While several cuts work beautifully for this slow-cooked shredded beef, oxtail is ideal for its perfect balance of rich marbling, high collagen content, and bone marrow that transforms during the long cooking process. The bones release gelatin that gives the broth an incredibly silky, rich body, while the meat becomes so tender it falls off the bone. That said, this recipe is quite forgiving with other cuts.
- Chuck roast is the most popular and budget-friendly alternative, offering excellent marbling and connective tissue that shreds beautifully.
- Beef shank (bone-in preferred) provides gelatinous richness similar to oxtail.
- Short ribs deliver exceptional flavour and tenderness, at a higher price point.
- Brisket, particularly the fattier point cut, works wonderfully for its slow-cooking structure.
The key is choosing cuts with enough fat and connective tissue to break into that signature melt-in-your-mouth texture while contributing to an intensely flavorful, body-rich broth.

Equipment for Slow Cooking
This recipe is adaptable to your preferred cooking method.
- A Dutch oven provides the most control. You can sear the oxtail first for added depth, then slow-cook it in a 165°C (325°F) oven or stove for 3-4 hours until fork-tender.
- A Slow-Cooker: For hands-off convenience, brown the meat in a separate pan and add it to a slow cooker on low for 6-8 hours or high for 4-5 hours.
- If you’re short on time, a pressure cooker or Instant Pot will deliver the same melt-in-your-mouth results in just 90 minutes at high pressure with natural release.
Regardless of your chosen method, the key is low, slow heat, which breaks down the tough connective tissue in the oxtail into silky, flavorful gelatin, making the meat incredibly tender.
Chipotle in Adobo

Chipotle in adobo are smoked jalapeño peppers swimming in a rich, tangy sauce made with tomato, vinegar, and spices. This Mexican pantry staple delivers that distinctive smoky depth and moderate heat, making this recipe appealing without overwhelming sensitive palates. What makes Chipotle in adobo particularly practical for home cooks is its wide availability – you can find it in virtually any standard grocery store, usually in the Latin foods or international aisle. The adobo sauce contains all the spices needed for our Mexican flavour profile, so there’s no need for extra spices, chillies, or spice mixes in this recipe – just garlic and bay leaf to round out the taste.


Chipotle Slow-Cooked Shredded Beef Tacos
Ingredients
Birria Meat
- 1.5 kg bone marrow
- 1 l chicken broth homemade better
- 100 g chipotle in adobo half the small can
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil or any neutral oil
- 2 bay leaves
- salt and pepper
Toppings and Wrap
- 10 tortilla wrap corn or wheat (medium sized)
- ½ onion finely sliced or chopped
- Oaxaca cheese Mozzarella, Gouda, or Monterey Jack (any firm young cheese)
- 1 handful cilantro
Instructions
- Heat olive oil in a Dutch oven over high heat. Season the oxtail pieces with salt, then sear on all sides until browned, for about 8-10 minutes. This step builds crucial flavour.
- Add diced onions and garlic to the pot and cook for 3-4 minutes until softened and lightly golden.
- In a blender or food processor, blend the chipotle peppers (2) in adobo with a little of their sauce until you have a smooth paste. Add this paste to the Dutch oven along with the chicken broth, bay leaves, salt, and pepper. Stir to combine.
- Bring the mixture to a gentle simmer, then cover and let simmer for 3-4 hours, or until the meat easily detaches from the bone when tested with a fork. (See equipment section above for slow cooker or pressure cooker alternatives.) The meat should always be almost covered, so add a bit of extra broth or water if it gets too low.
- Remove the meat and shred with two forks, discarding bones and bay leaves. Strain the cooking liquid through a fine-mesh sieve to create a clear, smooth broth for dipping. Serve the shredded beef in warm tortillas with the broth on the side.
