Chicken and Spinach Meatballs
Baked Chicken and Spinach Meatballs are fantastic little green protein balls made with feta cheese. They’re perfect to complement a salad, a sub, pasta, or by themselves as a snack.

These baked chicken and spinach meatballs are low in fat but high in proteins and vitamins. It’s a great recipe to hide the veggies for the kids; the extra feta in there gives it a nice little happy salty pop! They are so easy to make; even a baby can enjoy exploring them with his hands. Those little green balls go anywhere you want them: appetizer, salad, sub, pasta, etc. They are so helpful in completing any quick meal on a busy day.

For baby, you better cut down on the feta cheese to lower the sodium intake; these little green balls are fun, tender, and filled with healthy ingredients! They’re perfect for the little explorers and fun to bite into.
Baking or Air Frying?
Both work wonders for this recipe. You’d better go with the oven if you intend to make a big batch. Although cooking would take slightly longer, you won’t have to make many batches. In the air fryer, though, you’ll get a crispier finish. I cook them at 180°C (350F) with both methods but add 5 minutes to the baked ones, detailed in the recipe card below.

Play it Safe!
Did you know that buying ground meat puts you at a higher risk of salmonella and other pathogens? When you purchase pre-grounded meats, you need one piece of contaminated meat to spread over a big batch. Also, it’s much easier for the pathogens to spread around ground meat than whole cuts. So play it safe, use whatever boneless piece of chicken you prefer, and grind it yourself with your food processor. The meatballs will be as fluffy and yummy, so don’t worry! Ingredients

Chicken Breasts: Use whole chicken breasts for a safer, leaner meatball. We like high protein with low fat content.
Baby Spinach: Because it’s high in iron and vitamins and often difficult to give the kids, this way, they won’t feel a thing.
Feta Cheese: This is for the lovely salty touch and brings a creamy touch, which is optional.
Egg: To bind everything together.
Garlic: If you prefer sweet garlic, cook it in the beginning with the onions to bring a touch of sharpness to the dish.
Breadcrumbs: Whether standard or panko style, they make those balls fluffy.
Onion: It always brings un “je ne sais quoi” to every meal.

Spinach Chicken Meatballs
Ingredients
- 2 chicken breasts or 300g (10 ounces) ground chicken
- 70 g baby spinach
- 60 g feta cheese *optional
- 50 g breadcrumbs I like panko style
- 1 garlic cloves
- 1 egg
- ½ onion minced
- ½ tbsp olive oil
- salt and pepper
Instructions
- Cook the onion in olive oil at medium-high heat in a non-stick pan until it turns slightly brown and loses most of its water, about 5 minutes.
- Add the spinach to the pan and cook until soft, about one minute.
- Add the spinach mix to a food processor with the chicken breast, breadcrumbs, feta, egg, salt and pepper. Blend until homogenous.
- Make small balls with your hands, add them to a parchment or silicon mat covered tray and cook for 15 minutes at 200°C (400F) (Air Frying Method: cook at 200°C (400F) for 10 minutes).

Yes, baking or air frying is easier to good to perfection, while frying in the pan could dry the meatballs out.
