Cabbage Pizza Margarita (low-carb and Keto)
Cabbage Pizza is a creative, low-carb alternative to traditional pizza made with cabbage, onion, garlic, and eggs as the crust. Topped with tomato sauce, mozzarella, and fresh basil leaves, it’s a fun way to introduce kids to cabbage.

The Technique
To make the first part (watch the video below), you’ll need a 12-inch (30 cm) non-stick pan. An oven-proof pan is ideal, as you’ll finish the Cabbage Pizza in the oven. The technique is to flip the cabbage crust onto a big plate, like a Spanish tortilla, add the toppings, and finish it in the oven.
Cabbage is composed of approximately 90% water, which causes it to lose its shape when cooked. I don’t suggest cutting a big cabbage ring; it will shrink and make a mess. Therefore, searing and releasing much of its water at first will make it firmer and hold better as a ‘crust’ for our pizza.
Cooking cabbage quickly over high heat helps retain its nutrients and flavour. Once you add the eggs, reduce the heat to prevent them from becoming rubbery.

Equipment
- 1 12 inch (30cm) non-stick pan with a lid
- 1 big plate
Ingredients
Cabbage Base
- 4 cups white cabbage about 1/3 of a cabbage, sliced finely
- 1 onion sliced finely
- 2 garlic cloves chopped
- 3 eggs
- 1 tbsp olive oil
- salt and pepper
Toppings
- 3 tbsp tomato purée
- 250 g fresh mozzarella
- 3 leaves fresh basil
Instructions
- Mix the cabbage, onion, garlic, salt and pepper in a big bowl.
- In a large nonstick pan, sear the sliced cabbage in olive oil at high heat for 5 minutes or until it gets slightly brown.
- Lower the heat to low and add the three beaten eggs. Cover and let it cook for 3 to 4 minutes.
- Using a big plate to flip the pizza, turn over the cabbage base and add it back to the pan (video below).
- Add the tomato purée and cheese (and custom toppings or your choice) and broil in the oven (Max temperature) on the top rack until the cheese gets golden for about 8-10 minutes.
- Take the pizza out of the pan with the help of a spatula, and let it cool before adding the basil leaves.

This pizza was delicious. I’ll have to work on keeping in tact. I had a small portion break off. It was nice and moist. I added red peppers, mushrooms, and pepperoni. I should have put it in oven on lowest rack. Browned quicker than expected. I may actually bake it the next time instead of broiling the final step.
Yeah, you can always bake it, although the cooking should be done mostly in the pan. You can always cut on the stove time and make the oven cook the interior. The oven is mainly to grill the cheese on top. Glad you enjoyed it!
