  • If you want the Bacon Egg Bites to come out in one piece, use silicone or non-stick tin or muffin liners to prevent the bites from sticking.
  • To mash the potato and egg mixture better, use a flat-bottom bowl or a deep plate to mash it easily. Add the bacon bits afterwards.
  • Everyone’s ovens are slightly different, so keep an eye on them to prevent the egg from turning brown. If the side turns darker, it’s time to come out! The eggs should stay bright yellow. Otherwise, if overcooked, they will get rubbery.
  • Better use pre-cooked potatoes from the day before, which contain less water.
  • Spray your muffin tin lightly. Even if you use non-stick or muffin liners, they will slide right off this way. Paper liners, especially, can be sticky.

Breakfast Egg Bites with Bacon and Cheese are a savoury, satisfying treat made with mashed potatoes, eggs, bacon bits, and cheese. Perfect for breakfast on-the-go!

Equipment

  • standard muffin tin , recommending the use of liners or silicone tin to prevent sticking.

Ingredients
 
 

  • 350 g potato peeled and pre-cooked
  • 9 small mozzarella balls
  • 3 eggs
  • 3 slices of bacon pre-cooked
  • 1 shallot minced
  • 1 tbsp cream
  • salt and pepper

Toppings

  • chives *optional

Instructions
 

  • Preheat the oven to 180°C (375°F).
  • Mashed the pre-cooked potatoes with the eggs, cream, shallot and bacon bits.
  • Add the egg mixture to the muffin tin, make each hole about 3/4 full.
  • Add a small mozzarella ball in the center of each egg bite.
  • Cook in the oven for 18-20 minutes.
