Almond Meal or Flour?

Cream Cheese Center

The core of the Blueberry Muffins with Cream Cheese will bring a smooth surprise to the mouth. Before baking them, a pre-frozen cream cheese pellet is inserted into each muffin. Why frozen? This is to help it stay intact and not spread around the batter while baking. This way, you’ll get this fun, creamy effect, which is not too sweet to balance out the blueberries. You’ll need a silicone ice cube tray, but you could also add small peaks of cream cheese to parchment paper and freeze it this way. This is a lovely special touch to these blueberry muffins, but it is not mandatory.

Storage

You can store your muffins in the refrigerator for up to 5 days. Because they contain cream cheese, room temperature is not an option (two hours Max). However, they freeze very well as long as they are in an airtight container. Pop them out and microwave them for a quick snack.

Blueberry Muffins with Cream Cheese in its center are made with almond flour which makes them a great low-sugar and low-carb treat.

Ingredients
 
 

  • 250 g fresh blueberries
  • 200 g all-purpose flour
  • 200 g white sugar
  • 120 g plain yogurt
  • 50 g almond flour or almond meal
  • 2 eggs
  • 100 ml olive oil or sunflower oil
  • 1 tbsp baking powder
  • 1 pinch salt

Cream Cheese Center

  • 50 g cream cheese
  • 15 g powdered sugar
  • ½ tsp vanilla extract

Instructions
 

  • Mix the cream cheese, powdered sugar and vanilla extract in a small bowl.
  • Add it to a small silicone ice cube tray and freeze for at least an hour.
  • Mix all the dry ingredients in a big bowl: the flour, almond flour, baking soda and salt.
  • In a separate bowl, mix the eggs, yogurt and oil. Mix and combine both.
  • Add the fresh blueberries, mix gently and fill the muffin tray.
  • Insert the frozen cream cheese inside each muffin.
  • Bake at 200°C (400°F) for 20 to 25 minutes or until a toothpick comes out clean.

You can use either almond meal or flour.
Freeze the cream cheese for at least one hour to make it firm.
