The secret pink sauce contains all the usual suspects: mayo, ketchup and mustard, with a touch of pickle brine to make it ultra-tasty. The secret to this irresistible chicken burger sauce? Japanese mayo! It adds a rich, umami boost that everyone loves. Get ready! This might just replace your kid’s favourite ketchup!

Japanese Mayo
The secret? It’s all about the mayo! Japanese mayo, like Kewpie, is made with only egg yolks, rice vinegar, and a special umami booster. While MSG has a bad reputation, it’s a naturally occurring compound found in foods like tomatoes and cheese. Think of it as a ‘flavour amplifier,’ much like salt. This rich, creamy mayo is also known as sushi mayo and comes in a fun bottle with a double-ended cap; perfect for drizzling thick or thin lines of deliciousness!

Best Chicken Burger Sauce
Ingredients
The Pink Sauce
- 100 g Japanese mayonnaise or normal mayo
- 75 g ketchup
- 50 g yellow mustard
- 2 tbsp dill pickle brine
The Mini Chicken Burgers
- 6 mini buns
- 1 chicken breast cut into 1 cm thick patties
- 60 g panko crumbs breadcrumbs
- lettuce
- cheese
- cherry tomatoes
Instructions
- Mix all the pink sauce ingredients until homogeneous and reserve.
- Cut the chicken, dip in the egg wash (beaten egg) and coat with panko.
- Cook the chicken patties in the Air fryer for 10 minutes at 180°C (350°F) or fry in a pan with the olive oil for 5-6 minutes over medium-low heat.
- Warm the buns, then add the fillings, chicken and special pink sauce.
Notes
- For food safety, if you’re serving these as sliders, avoid leaving them at room temperature for more than an hour.
- Make the sauce ahead of time; it tastes even better after resting in the fridge for a bit, letting the flavours meld together.
- Regular mayo works just as well as Japanese mayo if that’s what you have on hand.
