These Banana and Peanut Butter Breakfast Cookies with oatmeal are the perfect snack or breakfast on-the-go for busy days.

Ingredients
 
 

  • 3 bananas ripe
  • 180 g rolled oats or instant oats
  • 50 g peanuts salted or not
  • 1 egg
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1 tsp cinnamon

Instructions
 

  • Preheat the oven to 190°C (375F°).
  • Slightly chop the oats and peanuts in a food processor.
  • In a big bowl, mix all the ingredients together with a spatula.
  • On a parchment-covered tray, make the cookies. Try making them similar in size.
  • Bake for 12 minutes at 190°C (375F°).
  • Let them cool for 5 minutes before serving.
