Unlike simply grilling cheese on top of a sandwich, which is greasy and stringy, this thick sauce will form a gratin layer but keep its smooth and creamy texture, which is simply addictive. The Technique

Making béchamel sauce is easier than it seems—remember the trick of “warm meets cold” to prevent lumps. Professionals often pre-make a cold roux (flour and butter) and store it in the refrigerator, adding it to hot liquids later to thicken sauces seamlessly. But here, we’ll reverse it: Make a warm roux, then add cold milk while whisking. This way, you’ll get a perfectly smooth béchamel every time!

If you want to make a French sandwich, you could use Comté, Emmental, or Gruyère cheese. Nowadays, everything is permitted, I’ve used simple pre-cut slices of Harvarti on the inside and Comté on top. But a good cheddar would do, too, although I would use a sharp, slightly aged cheese. In France, nowadays, pretty much all sandwiches are called croque-monsieur sandwiches, could be made with tuna, veggies, chicken, etc. made with or without the gratin topping. Today’s version is the traditional one you’ll find in most French Bistros.

Bread and Ham

The bread choice is usually a square-shaped bread, “pain de mie,” as it is called in France. This basic bread is sliced thinly and has a thin crust. But if you want to elevate your sandwich, you can always use lovely sourdough bread.

As for the choice of ham, it is the best cooked white ham you can find; basically, you can get creative here.

Using an air fryer to make a Croque-Monsieur is genius because it streamlines the cooking process, delivering that golden gratin and gooey interior in minutes. Variations

If you have fussy eaters, add the bechamel layer solely to the sandwich’s interior. There is also the Croque-Madame version, the female version with a fried egg added on top of the sandwich. Croque means “a bite,” and Monsieur and Madame are Mister and Mrs., so you do the math.

This air fried Croque-Monsieur is a deliciously simple twist on the French classic, with layers of ham, melted cheese, and creamy béchamel sauce toasted to perfection in half the time.

Equipment

  • Air Fryer or oven

Ingredients
 
 

  • 8 slices bread could be standard or sour dough white bread.
  • 4 slices cheese Cheddar, Harvarti, Gouda, etc. (mild type of cheese)
  • 8 slices ham

Mornay Sauce (Cheesy Bechamel)

  • 300 ml milk cold
  • 50 g sharp cheese Gruyere, Comté, sharp Cheddar or Emmental.
  • 30 g flour
  • 30 g butter
  • nutmeg *optional

Instructions
 

  • Start making the bechamel sauce by adding the butter and melting it in a small saucepan at medium-high heat. When melted, add the flour and let it cook for a minute or two, until it smells nutty, then pour the cold milk in and whisk until thicker (takes a minute or two).
  • When the bechamel is thick, stop the fire, add the nutmeg and grated sharp cheese to the sauce and whisk until melted and smooth.
  • Assemble the sandwiches with a layer of bechamel inside, then mild cheese and white ham. Add the top bread and cover generously with the bechamel sauce and extra optional nutmeg.
  • In the air fryer at 200°C (400°F) or broil in the oven, cook the sandwiches for 5 minutes or until golden in the oven (about 10 minutes).
  • Cut the sandwich and serve it immediately.

Serve with a green salad or fries.
It could be turned into a hors d’oeuvre (finger food) by cutting it into smaller bites with a wooden stick.
